Strange But Good: Peanut Avocado Sauce

The secret is always in the sauce.

 

Literally.

I am sure someone is going to say they’ve done this before, but maybe not on top of this eggy breakfast item. ย I’m not sure if it’s an egg crust or what, but it was good. ย And it was made ever more strange with a peanut nutty topping.

Peanut Avocado Egg-cake

 

Peanut flour and avocado sauce. ย Avocados are a fairly neutral flavor, and they add amazing texture to foods. ย I love to use them in scones, chocolate cake, and shamrock shakes to add healthy fat and a creamy smoothness. ย So why not in a sauce?

I mixed it together with a little almond milk and stevia before spreading it across a cinnamon-egg “crust” and adding blackberries and jicama to the top. ย I purposefully left little pieces of the avocado in there… you know, for added strangeness.

If you are a texture junkie like I am, you will adore this. ย From the smooth spread to the juicy berries to the crisp jicama, eachย bite is a party in your mouth (that’s what she said).

Peanut Avocado Eggs

Peanut Avocado Eggs

  • 1/4 avocado
  • 1 T peanut flour
  • Stevia, to taste
  • Almond milk (add to desired consistency)
  • 1/2 C egg whites
  • 1/4 tsp cinnamon
  • Optional toppings: blackberries, jicama

 

In a small bowl, mash avocado. ย Mix in peanut flour, stevia, and almond milk, adjusting to desired consistency. ย Set aside.

In another bowl, whisk together egg whites and cinnamon. ย Place in a small pan and cook over med-high heat until almost done. ย Flip to finish off the top. ย It will form a sort of egg white pancake.

Place egg whites on plate, spread with peanut sauce, and top as desired. ย Enjoy!

    im sure this comes as no surprise to you, but I’ve made a peanut avocado mash. but i’ve never put it on eggs, i used it as a spread on toast. but i’m firm believer anything with avocado is amazing, and let’s be real a peanut avocado mix? amazing ๐Ÿ™‚

    Genius! I’ve mashed avo and vanilla whey protein and that’s pretty incredible, but I imagine this is whole new level stuff.

    NEVER thought to combine avocado and peanuts. But why not!? That sounds really good. I think I’d add a little sriracha for some spiciness. Thanks for the idea!

    I don’t know why, but the little arrow pointing out the avocado chunk literally has me laughing out loud. I have never tried this but it’s definitely something that I can see in my future! And yes to jicama – good so many ways … your jicama nachos, sliced with cayenne or cinnamon, sliced plain, in salads, and more!

    I love baking with avocado and I have had it with eggs, but I dont think I’ve ever had eggs topped with peanut avocado sauce and blackberries – definitely strange – strange enough to be good ๐Ÿ™‚

    I always love seeing your crazy concoctions! This recipe reminds me that I need to use avocados in more things – I usually just crave the full flavor and eat them plain or in guac.
