Ode to Lemons

Did you know…

Lemons are really good for you?  A single lemon satisfies your daily intake of Vitamin C (strong bones, people!).  They also are a good anti-inflammatory.

 

The taste of water isn’t my favorite.  I keep a lemon in my fridge at all times and squeeze slices into my water.  Adding lemon encourages me to drink more by masking the flavor of Atlanta’s finest tap water.  I drink A LOT of water.

 

Other Lemon Uses:

Use the juice to make a simple dressing for salads.  A french green bean salad was delicious with this Lemon-Tahini Dressing.

Sauté them for to serves with pasta or chicken.  Check out this pasta dish I made with Meyer Lemons and asparagus (yes, you can eat the whole thing).

Bring out flavors in dips or sauces with lemon.  I used both lemon juice and zest to highlight the roasted red pepper and spices in this Muhammara (Red Pepper and Walnut Dip).

Lemon can add an extra dimension to desserts.  This weekend’s Rosemary-Lemon Shortbread Cookies would have been missing something without the citrusy zest.

Why the lemon plug?  It’s HOT outside.

I did a 4 mile run this morning and by the time I was done it had almost hit 90 degrees outside.

This is run #3 since I pulled my achilles.  Post-run I was chugging lemon water to rehydrate and reap the benefits of the anti-inflammatory.

My Achilles was ok.  I could feel the strain, but it wasn’t painful enough to slow me down.  Flat land is hard to find in Atlanta, but I managed to more or less keep away from hills to avoid stressing it too much.

    I’m not a fan of strong lemon in most of my food, but I love lemonade, lemon bars, and a few other treats. Odd? Yeah – I guess. 🙂

    I don’t have a secret for adding anything special to dishes, but I add extra onions to almost everything I make. They’re so versatile (and affordable!)

    I haven’t ever thought of grilling a lemon!
    I add avocado to many of my recipes… even use avocado in my chocolate frosting.

    I do the same with lemon wedges in the fridge to add to water…I don’t drink enough water because it’s so blah, but the lemon makes it easier to swallow (pun intended)

    I’m glad your achilles is starting to get better. Way to stay speedy even in the heat 🙂 I’m still working on the running in the heat. It’s not so much the heat that bothers me though, it’s the humidity and the heat. I’m too used to running in the dry heat. I add Adobo and/or smoked paprika to everything.

    Ooh grilling a lemon sounds interesting! I always drink hot water with lemon in the morning and before I go to bed… I’m hoping today that it cancels out all of the cocktails! ;D

    My secret to staying strong during this heat is to take it inside, actually. I really miss running outside though!!! I guess setting an alarm early enough to beat the heat would be helpful, too..but laziness gets the best of me on that one.

    Mmm, lemons! Glad to see them getting some love! I think I want to make just about every recipe you have posted here 🙂 Especially the dip! And cookies. But I always want to make cookies. I am sharing your achilles pain right now, as my old injury has decided to reappear–bracing it and trying out KT tape. And I love heat, so managing it isn’t hard for me to do! Plus I keep lots of frozen treats on hand…

    I LOVE lemon! During the spring and summer, it replaces my love for pumpkin and I put it in everything- breads, hummus, desserts… it’s so versatile!

      Will do! I haven’t tried theirs, but Varasano’s makes a lemon arugula that’s pretty good too.

    I buy lemons by the 3 lb bags – LOVE adding them to my water and they’re also a great flavor booster to veggies! Added bonus is the detox effect when you drink lemon water first thing in the a.m.

    First I’m so sorry I didn’t stop by yesterday to send a big hug. I didn’t realize that we have very similar experiences in losing our father’s too soon. What you wrote is so true that it’s important to remember how lucky we were to have our wonderful fathers as long as we did. I usually remember that but it was hard yesterday.

    I am loving all the lemon dishes! It is funny isn’t it how lemon is so acidic to the tongue but actually alkaline and anti inflammatory in the body!
