Mile-a-Day Challenge + WIAW

Waking up to an alarm was cruel and unusual punishment this morning.

 

Thank god it’s a short week because after so much time off (or at least out of the office), getting back to normalcy hurt a little.  Like a good back-on-track human, I only hit snooze 3 times before getting up and hitting the gym for a quick Body Rock workout and a 1 mile run.

 

1 mile everyday is January is my goal.  It’s about the longest I can stay on the dreadmill and I refuse to run outside when it’s 22 degrees outside.  When I saw the January Mile-a-Day challenge on The Sweaty Betties, I knew it was the perfect fit for me.

This is my way of *hopefully* maintaining some semblance of running shape while on my running “break.”

Another benefit of a short week is that it feels like What I Ate Wednesday came faster!  Happy 50th, Jenn!!!

 

 

I’m in full-on snack mode.  I want to eat veggies and protein, and I want to eat them often.

 

Breakfast:

Post-workout breakfasts are usually cold, but this morning was a mini workout… and it was only 22 degrees outside.  A warm Pumpkin Zucchini Muffin topped with melty peanut butter and a side of hot green tea hit the spot.

 

 

 

Lunch:

“Meat” loaf leftovers!  This vegan loaf was even more awesome on day 2.  The flavors came together even more and provided a delicious, warming work lunch.

 

In case you missed it, check out the recipe for my (vegan!) Asian-Inspired Sweet Potato Lentil Loaf here.  I can’t tell you enough to try it – I can’t believe it took me so long to make one!

Today I ate it with raw zucchini sticks (if you on’t already eat it raw you have to try it) and red pepper hummus.

 

Dinner:

Since I’m obsessed with my new discovery – miso – I made a miso soup!


 

This was an amazing, hearty noodle-filled soup with plenty of green and just enough spice to make my nose run.

Snacks:

Most people are probably the opposite, but I snack MORE when I’m a work.  It is my equivalent of a smoke break. 🙂

    Ooh, I *love* miso soup! I’m glad I’m not the only one who thinks it is a cure-all. And your lentil loaf looks/sounds delicious–I am intrigued by the asian spin on it. Must try.

    OH MY GOSH. That muffin with peanut butter looks amazing! I would gladly have that for breakfast, lunch, dinner AND supper!!!! 😀

      Thank you! I make a dozen every couple of weeks and freeze them so they stay fresh. Then I am just 30-40 microwave seconds from a warm muffin for breakfast!

    I just got a gym membership (finally!) so I have access to a dreadmill so I’m about to go check out the mile a day challenge. 🙂

    Yummy eats! I’ve totally failed at making protein muffin in the microwave..

    That’s a great challenge. But it’s a bit chilly out for me to be running outside!

      That’s why I’m doing this challenge – even I can tolerate a dreadmill for 1 mile. For some reason my mile time is 1:30 slower though!

    I like the mile a day challenge – simple and keeps your body in the running state of mind. I don’t have a January challenge, but I’m hard at work on making sure I actually stick to my New Year’s goals. So far so good!

    And that “meatloaf” looks delicious! May have to give it a try this weekend. 🙂

    I was worried that I was going to snack more not working, but I’ve actually found that I snack way less. It’s more of boredom relief at work and when I’m at home, I can find something else to do.

    I definitely snack more at work, when at home I could go half the day without eating…kind of weird.
    Looks like a good day of eats, but as for January challenges none for me.

    I have to get myself back on track after being on vacation…man I am so disconbobulated.

    oh man, i wish i had known about the mile-a-day challenge earlier! it’s such a good idea – and i can definitely handle a mile a day. maybe i’ll hop right in and try to catch up!

    i snack way more at home than at work… i’m not sure why because i have a drawer of my favorite “emergency snacks” right next to me all day at work.

      Recipe is up! I definitely recommend trying ti out – it’s quick and easy. Plus it’s fun to customize!

    It depends on the day where I snack more. That might be weird. But sometimes I don’t realize I am hungry if I am busy.

    That lentil loaf looks so good. When I get done reading a hundred WIAW posts I am gonna have to check it out.

    I am really loving thinkthin bars right now. My favorite is the brownie one. It is so good. Some of the other ones taste a bit funky, but it is an acquired taste.

      I need to re-try the brownie. Did you notice they changed the formulas? I used to love the Chocolate Toffee but the new version is not so good.

    I love the idea of a mile-a-day challenge – that’s what I did this time last year when I was building up to train for a half-marathon!

      Did it work well? I’m sort of doing the same thing – aiming for the Nashville Half in April, but I can’t bear to run outside in the cold!

    Those 22 degrees were KILLING me!! I am so glad it is supposed to warm up soon. I always bring snacks to work but I rarely eat them which is weird because I use to be an all-day eater (smaller meals) and now I’m a three-meals-a-day kind of girl.

    That sweet potato lentil loaf looks unbelievably tasty! And so does all that PB on your breakfast muffin. I swear, PB makes everything taste awesome 😉

        The dashi makes a big difference in authenticity of taste. Regular dashi isn’t vegan/vegetarian though. If’s made from kelp and tuna. The kombu dashi and shiitake dashi might be vegan.

          That’s what I hear – I actually talk about the types of dashi in today’s post. There is also a dried shrimp version.

    Do you like the ThinkThin bars? I remember thinking they tasted chemically when I was in the States, but maybe they’ve been reformulated?

      I think it totally depends on the flavor. they did change the formulas… and now I hate my old favorite but love the Cookies ‘n Cream. Go figure.

    I just love to snack PERIOD! At work or at home either way I’m way worse when I am bored! Fab challenge, it’s a really good way to build up an appetite for running! I might join you on this one! I’m just hoping we have no more rain so that I can take the dogs on the trail. Running on the road with two dogs on leads just aint happenin!! Oh, and good luck with muffin attempt number 2! 😉 I made mug cake last week and it was scary good… it’s taken a will of steel not to make one again since then!!

      I never liked the “real” thing but these are great. I’ve seen them at Whole Foods and a couple of local health food stores.
