Strange But Good: Mexican Pumpkin Pan-lette

Pumpkin makes a great dessert.

Except pie.

I really love it mixed into yogurt bowls, as ice cream, or as bread.  I do not like pumpkin pie.  It’s texture thing… maybe too close to white potatoes?  I digress.

This post has nothing to do with pie.  I tried something new with my pumpkin – I made it a savory breakfast!  It’s actually just a new version of my sweet Pumpkin Pan-lette… a Mexican Pumpkin Pan-lette!  Some may consider this strange.  It also happens to be good.

I added Mexican-inspired spices to the pumpkin and egg mix in order to make this part omelette, part pancake creation a smoky, spicy breakfast.

Pico de gallo and some runny #yolkporn (a.k.a. syrup) topped this.  Someone on Instagram suggested bacon… which would have been brilliant.  If you make it, add bacon. 😉

Mexican Pumpkin Pan-lette

Mexican Pumpkin Pan-lette

  • 1/2 C egg white
  • 1/2 C pumpkin puree
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • Topping ideas: fried egg, pico de gallo, bacon

Combine all pancake ingredients into a medium bowl and stir until smooth.  Pour into a prepared (I used olive oil) skillet and cook as you would a pancakes (~2-3 mins on each side).

Meanwhile, prepare toppings.  I used a fried egg and pico de gallo.

Plate your ‘cake-lette, top as desired, and enjoy!

Note: I made this as one huge pancake.  In order to avoid flipping disaster, I finished mine under the broiler and turned it over onto my breakfast plate.

    Ohhhh you know I’m a huge fan of squash or pumpkin savoury style- this is right up my alley!

    I tried pumpkin pie several times and was NOT a fan for the same reason as you- too close to potatoes AND also how here its strictly a savoury thing!

    I’m with you on Pumpkin Pie. Not really a fan but I did have an outstanding Pumpkin Pie Cheesecakes with a gingersnap walnut crust last year. Hands down the best thing I ever ate!

    I never had pumpkin pie. We don’t have it here, so I didn’t get to try it, but obviously I am not missing a lot! I don’t like white potatoes either.
    I love that savory pan-lette! You inspire me to do something like a crustless quiche with savory pumpkin……

    Haha! I heard about that new B&J flavor on the radio the other day…and I want it! Just wish it had a little actual scotch swirled in it too! Lol

    Please tell me you did NOT just compare pumpkin pie to mashed potatoes! What is it with all you weird texture phobia foodies? I swear all the pumpkin pie haters have been coming out of the woodwork lately! Well I won’t have it…I just WON’T! *sticks fingers in ears* Nah nah nah nah naaaaaaaah!

    Favorite pumpkin creation this season was definitely my pumpkin peanut butter pancakes, but I’ve also been loving my NIGHTLY pumpkin yogurt bowls…and then I just had one this morning too. Um yeah, mission to become an oompa loompa before the end of this month is going well! 😀 Love the Mexican spices on this…and the egg! And of course I don’t find this strange at all…especially since I use pumpkin puree as a pizza base all the time!

      I don’t have a phobia! I just hate it. The mouth feel makes me gag (so does the phrase mouth feel…).

    This sounds wonderful, Laura! If I figure this correctly, the panlette itself would be 0 points on Weight Watchers. Add an egg and that would only make it 2 points. Sounds yummy! Need to go buy some pumpkin!!

    So I guess pumpkin is usually an ingredient to sweet dishes, but I’ve been loving all of the savory ones that are coming out! Although it still surprises me to see it paired with non-sugary things…. Like with mexican- never would have thought of that combination! Ooo yes. Pico de gallo on top would be awesome!

    I shared my pumpkin calzone although looking around I’m not sure it’s strange enough. Ha! 😉

    I am one of those pumpkin freaks. I just really like it and I wish pumpkin stuff was available year round, especially pumpkin coffee. They only think people want pumpkin coffee in the fall and winter? I beg to differ.

    I DO NOT like pumpkin pie either. ICK! I love the smell and effin LOVE pie, but I cannot get over the texture or something. Gross.

    I actually bet this was pretty good, pumpkin does really well with spices!

    This is totally up my alley and cannot believe I haven’t tried this yet! I’m all about pancakes sweet and savory and adding bacon takes it to awesomeness level. 🙂 Pancakes are kind of like oatmeal…both can be fabulous sweet and savory. Have a great weekend!

    I’ve never had pumpkin pie, it’s pretty rare (or rarer) here in Australia. ‘Pumpkin pie’ is some magical US dessert that is served at Thanksgiving … if TV has taught me anything 😛

    If you’re ever stuck for career ideas, you should be a food stylist. EVERYTHING you cook looks brilliant and impeccably presented, even the recipes most of us can’t photograph to look appealing (that’s YOU green smoothies :P)
