I must confess – this recipe came together based solely on what I needed to use in my fridge.  We’re about to be traveling for 2 weeks and I absolutely hate to waste food.  Pasta salads are always a great way to achieve that.  Even better that I had this gluten-free pasta from TresOmega to try out.  It’s a quinoa-based pasta, perfect for Vegas’ pasta-loving, gluten-sensitive tummy.

Pesto is my favorite sauce for any pasta salad.  It’s delicious warm or cold, and it’s packed with flavor.  I keep some in the freezer for pasta (or pizza) emergencies.  To complete the Mediterranean theme, I added tomatoes, Kalamata olives, and feta cheese.  It reminded me of the simple, delicious meals we had in Greece!

Gluten-Free Mediterranean Pasta Salad

Prep Time: 10 mins

Ingredients (4 servings)

  • 8 oz Fuselli pasta, pre-cooked
  • 1/4 C pesto sauce
  • 1/4 C Kalamata olives
  • 1 large tomato
  • 1/4 C crumbled feta cheese

Instructions

Place pasta in a large bowl.

Add pesto and stir to combine. Toss with remaining ingredients. Season with flaky sea salt and freshly ground pepper, to taste.

Breakfast:

Maybe half a cup of coffee (I only drink it out of ritual).  Then the morning cocktail I detailed last week.

I prepped another Vanilla-Cinnamon Spirulina Chia Pudding the night before because I know I’d have a super busy day.   This is a pic I posted with the recipe last week.  It’s much prettier than the un-staged one. 😉

Lunch:

After a workout and running in the zero gravity treadmill, I was starving and smelly.  I also had to be about 20 mins north for an appointment.  Thankfully, I’d planned ahead.  I cleaned myself with baby wipes and changed in the bathroom after the run.  However, I forgot underwear.  The rest of the day was spent commando.  Slightly uncomfortable, but fun.  HA!

Anyway, lunch was eaten down the street from my appointment at one of my favorite spots.  Sans panties.

Dinner:

After a long, crazy day, I was really happy to have my pasta salad in the fridge and ready to eat.  We had that, plus some leftover Balsamic Mediterranean Chicken.

    lol to forgetting underwear – I’m always afraid I will forget something! at least no one else could tell! I used to LOVE pasta salad with diced up breaded chicken mixed in with an Italian dressing.. It was so good the way I would make it back in the day.

    Riley made some pasta salad on Monday and we’ve been eating it all week. He did a Mediterranean deal too, and it always makes for such great leftovers. Have fun in Atlanta! That’s insane that it’s been 95 degrees. It just started cooling down over here on the East coast, so enjoy it!

    Heheheheh I actually haven’t ever forgotten underwear, but honestly it’s pretty shocking to me that I haven’t. And I once made this great pasta salad from Running with Spoons that was dressed with a kind of honey mustard greek yogurt dressing, and it was everything!

    This pasta looks amazing! Ok, full disclosure: we’ve been fully gluten-free for about six weeks now and I cannot believe it took this long to try it! The changes are unbelievable in body, energy and skin- it’s crazy. Can’t wait to try your recipe AND it’s been a while since I did a WIAW- I’m excited to be back!

    Two of my favorite things…

    1) Crazy easy recipes where the first instruction is “place pasta in a large bowl”

    2) Not wearing underwear. “Slightly uncomfortable but fun” –> isn’t that the description of some of the best things in life?

    (oh and #3 – getting rid of things in the fridge. Thank you for giving me an idea on how to use the rest of my feta)

    I’m so into the whole Mediterranean food vibe right now. I can’t put my finger on it, but I’m craving all things Italy! 🙂 I love the spirulina fig pudding concoction too, by the way. I’m obsessed with the green stuff! 🙂

    I don’t eat enough pasta salad. I usually avoid all pasta but I don’t have any issues with pasta salad especially this gluten free version.

      I hear you. I don’t eat a ton of full-on pasta plates, but having something like this as a side is perfect for me at lunch.
