Cornbread Waffle Breakfast Sandwich [Recipe]

This Cornbread Waffle Sandwich uses cornbread as a healthy “bread” for a cheesy egg and bacon breakfast sandwich. The perfect customizable breakfast for a crowd!Cornbread Waffle Breakfast Sandwich

Heather and her husband Kirk came to visit this week, and Vegas and I had a blast entertaining them in our new town.  We were friends back in Atlanta, but now that we’ve all moved it’s even more special when we can get together.

Heather and Kirk are no strangers to strange goodness, so I decided to make a worthy breakfast for everyone.*

*Except for Heather.  She’s 4 weeks out from her 3rd Bikini competition!

Remembering my cornbread waffle recipe, I decided to use them as the “bread” for this breakfast sandwich.  It worked really well!  I made a double batch of the recipe and poured them a bit thinner to make sure you could actually get your mouth around the sandwich.

I know Kirk is a big bacon fan (as is Vegas), so that was a must.  You can’t really have a breakfast sandwich without it!

Cornbread Waffle Breakfast Sandwich

I made a giant batch of cheesy eggs and sautéed red pepper to stuff the sandwich.  I used Red Dragon cheese, a Welsh cheddar made with brown ale and mustard seeds.  It’s fantastic; I love the little crunch from the mustard seeds!

Rather than use mayo for the waffle-bread, I slathered it with hummus.  It’s my new favorite condiment.


Cornbread Waffle Sandwich

Prep Time: 5 mins

Cook Time: 10 mins

Ingredients (1-2 servings)

  • 1 cornbread waffle
  • 1 T hummus
  • 4 slices bacon
  • 2 eggs, scrambled with cheese
  • 1/4 C red pepper, diced and lightly sautéed

Instructions

Prepare waffles according to recipe and cut into fourths.

Slather with hummus and stack on the bacon, cheesy eggs, and red pepper.

Note: This would also be great with spinach, onion, or other veggies. Use your imagination!

    I think a waffle would make a wonderful sandwich! Though I would obviously fill it differently. Maybe tempeh bacon and scramble tofu 🙂

    I was just saying I need to buy a waffle maker! Cornbread is my favorite too! There is actually a restaurant near my house that has waffle sandwiches. I haven’t been there but it’s always packed.

    This is in no way weird to me. Then again, I come from the south, and waffles are totally open season for sandwiches. But damn it looks great!

    You had my heart at bacon + waffles. Lol. 🙂 Man running out of bread is a crisis in this house. My son is HUGE on bread – and it’s a problem because he’s a picky eater. I really need to crank up my creativity like you do in the kitchen but .. jeez where do I start? I’m not very creative and am a flawed creature of constants: pasta, meat, pasta, breakfast foods. Lol.     This post made me think of cornbread skillet eggs benedicts from Sea & Smoke in Del Mar, in case you have never been there. The ingredients in your breakfast sandwich sound so good too!

    Waffle instead of bread is just genius- well played! Aside from hummus, my favourite condiment of late is definitely Sriracha- can’t get enough of the stuff!

    Waffles are one of my favorite breakfast foods, I love adding cornmeal to the batter since it adds a much needed crunch. The idea of hummus combined with cheesy eggs and peppers made my mouth water. Delicious.

    This looks so good! I think I have to whip these up for the hubby! I’m thinking swap out the hummus for avocado (love hummus but think mashed avocado would taste amazing) and hold the bacon. Oh man if I hadn’t already had breakfast, a creation that just came out of the oven to test and another one going in I would make this since the hubby is working from home today.
