This WIAW I’m in Colorado camping out at Heather’s house.  It’s been so much fun being here and in her kitchen!

Breakfast:

My morning cocktail, even in Colorado.  This one was enjoyed with a much better view than is typical!

I gave Heather my fruit (do not get in the way of a reverse dieting bikini girl!), so I went with carrots as my breakfast fruit.  They’re one of the sweetest veggies you can have, and make for a perfect way to start the day!  

I used shredded carrots to make my TVP oats.  I also added some coconut flour and a little additional liquid.  Topped with peanut flour.

Mid-Morning Snack:

It was a little disjointed.  I had some (unpictured) turkey and hummus, and then I raided Heather’s nuts.  #twss

She used these to make sushi (?!).  You should go vote for her recipe.

Snack Out Loud

Lunch:

Baked Turbot with greens.

Mid-Afternoon Snack:

Post-workout chocolate shake – eaten right out of the canister.  Too hungry to put it in a bowl or take a pic, so here’s a pic I took on Saturday when I did the same thing.

Dinner:

We pre-gamed with fancy beers.

Then it was on to the main event – Heather’s sushi rolls!!!  (And more beers!)  

Heather actually trusted ME to roll them.  She’s is a great teacher, but it’s actually not as hard as I thought it would be.  I even made an inside out one.  The sushi mat really does help.  I’ll be buying one of those when I get home!

    Carrot cake oatmeal is one of my favourite breakfasts! I just add grated carrots, sultanas and a ton of cinnamon to my regular oatmeal, soo good! I’m glad to see I’m not the only one 🙂

    Wow nice rolls, girl..I’m especially impressed by the avocado outer layer! I’ve been adding spinach to my smoothie a lot lately and I’m not going to lie- I feel pretty smug that I’ve already gotten in a serving of greens so early in the day 😉

    My Sushi Rolls are horrible!! I am definitely NOT talented. Oh well. I can do other things. 🙂

    Adding veggies to breakfast is an art…shredded zucchini, shredded cabbage, veggies on a pizza….yep.

    You guys look like your having a blast…..making homemade sushi? Genius. Stuff it with the good stuff!

    Yum! Homemade sushi looks amazing but also incredibly intimidating! Every morning I make a veggie egg white omelet to start my day with veggies. It must be the reverse dieting way, get them in early so you can have dessert 😉

    Colorado is gorgeous! I’ve only been there once but would love to go back. As for veggies, I like to saute eggs and kale together for breakfast- or add avocado and tomatoes to eggs, but I definitely don’t get veggies in every morning.

    I”m impressed that you guys made your own! We’ve had a DIY sushi kit for about a year, but we’ve never broken it out…one day!

    Yay for Colorado beer!! And I love your artsy CO pics! I’ve made sushi rolls also supervised by a friend but a restaurant here offers a class where you learn and eat, so I might try to do that in August.

    I use pumpkin in my Breakfasts pretty often (even though it’s Summer), so I suppose I get in some veggies only occasionally since I despise savory breakfasts. I should change that probably…oh well!
    Okay, I need to learn how to make sushi rolls. I heart them and whenever I try I get so worked up that I just give up. As a perfectionist, I can never get them right and it makes me too annoyed ha.
