Cats, Mimosas, and Meal Prep [WIAW]

It’s been a long long weekend.

The humidity didn’t help.

Vegas didn’t come home for the long weekend, which kind of sucked.  It feels lonely without her even though I’m not alone… sometimes you just need your person.  At least I had the kitty and a good book to snuggle with

I did a lot of walking and running this weekend (between rain showers).  I love exploring ATL on foot.  You see so many things you’d miss otherwise!  Like these super cute tiny doors.

As such, I decided to get back on track for real this week.  I meal prepped like a mofo for the first time in… 3 years (?!).  First time since Vegas, really.  Which means this #WIAW is a legit prepped in advance, healthy day of eats.  I didn’t even touch the free food at work!

Breakfast:

As always, I made my morning cocktail before walking to work.

I’m not much of a breakfast person during the week.  I’d rather sleep in and eat at 10-ish.  This means my work breakfasts generally aren’t “normal.”  This was basically dinner for breakfast.

In the bowl: turmeric ground turkey, roasted cauliflower with herbs, and brown rice.  Plus sriracha.

Snack:

I typically workout during lunch, so I needed a little snack to fuel me.

Walnuts for stay-power and apple of a little bit of extra energy (it was leg day).

Lunch:

Lunch was pretty tasty. Garlic roasted beets, a bison burger, and more brown rice.  I added sriracha post-photo.

It’s been forever since I’ve made bison burgers – they used to be a meal prep go-to!

Funny story about beets.  If you eat a LOT of them (and I did), your pee will turn pink.  Don’t be alarmed.  You’re not bleeding internally. 😉

Dinner:

Since I had dinner for breakfast, it was only fair to have breakfast for dinner.  You can’t go wrong with #yolkporn and sweet potato!

    I love dinner for breakfast and breakfast for dinner. Leftover dinner is a constant breakfast for me, unless I had breakfast for dinner in which case it would be breakfast for breakfast. Anyway, glad you enjoyed the long weekend!

    Meal prep is one of my go-to ways to distract/keep myself busy on a weekend I’m feeling a little lonely or the weather sucks. Looks like you enjoyed a lot of good stuff. Also, those tin doors are adorable!

    Well go you. Not touching that insane free food at work? Impressive. Though, I must wonder if after a while you get a little sick of it. I know people are always saying to me, “I’m so jealous you get to eat the food at your work all the time!” And I’m over here like “Yeah…. I’m completely over it.”

    Lonely is a real thing. Kats and walking can help. Hope you guys have plans to be together again soon!

      I don’t really get sick of it… but there are some days that are better than others. They always have a salad option, which is really nice.

    Okay that breakfast and dinner are DREAMY, even if a bit out of order 😉 Good on ya for meal prepping; I keep really wanting to and then just eating quick convenient things instead most of the time because it’s just so much work! Highlight of my weekend was hanging out with my college buds in NYC when they came down to visit for the day; lots of good food, board games, and adventuring ensued. 🙂

      I was in the same cycle! I was so good about it for years. Working from home for 3 years really threw me off. So glad I’m getting back in the habit.

      Glad you had fun with your friends! Board games are so much fun with a group!

    I’d rather sleep in and have breakfast later too! And the thing about the beets – yeah that’s why my kids won’t eat beets. Too scary. 😉

    Funny story about beets… you don’t have to eat a lot of them. I always forget I ate them too, which is a terribly scary surprise.

      A few don’t bother me… getting to a giant cup of them definitely does though. I feel like I read somewhere the response is individual. Like some people will never pee pink after eating beets. Weird, right?

    OMG I seriously thought for a while that something was going wrong inside…. Then I realised I was eating more beets. That was a relief for sure! Ha! I don’t have any issues with asparagus or anything so beet pee didn’t even occur to me!
    And yes for dinner breakfasts. Any leftovers are fair game for me, every meal is interchangeable!

      My mom did the same thing! She drank a thing of beet juice – I guess for the first time – and actually went to the doctor due to the pink hue. LOL!

    Ha, I don’t really eat dinner from breakfast, though sometimes I do breakfast for dinner (pancakes for the win!). And wait, is the kitty yours??

      NOOOOOO the kitty isn’t mine. It’s a friend’s cat. I like cats, but I just don’t want to own an animal. You know me. 😉

      She’s still out west… hopefully job news is coming soon and she’ll be here by the end of the month. What is with these multi-state marriages?!

    I eat whatever the heck I feel like! Pizza for breakfast. Actually, ANYTIME. Eggs for dinner. Everything is a winner! Since my mom was coming into town, we did some super cleaning over the weekend. I was so happy to finish organizing my art/office supplies in the closet. Also we moved a futon out of the kitchen and re-positioned the island. It looks SOOOO spacious and clean. I hope it stays tidy for a while. And that kind of thing makes me happy.

      Pizza for breakfast makes me think of college. Totally acceptable as a breakfast food!

    I have dealt with the beet dilemma on many occasions, although the worst was seeing it effect Ave. There was a panicked WTF moment there before I remembered her beet smoothie.
