Blueberry-Pear Overnight Pudding

It is safe to say that warmer weather is here!  *knock on wood*


This means (but is not limited to meaning):

  • Living in the park (even the homeless dudes think I reside there)
  • Braves games
  • Sun burns tans
  • Softball season
  • LOTS of patios

 

Softball season kicked off Sunday morning.  I got 2 doubles, 2 singles, a walk, and a RBI.  I’ll take it!

Unfortunately, the Braves didn’t experience the same success… we lost to the Phillies (yo).  Not that this stopped us from smiling while earning the first sunburn of the season.  Despite several coats of SPF50.

The post-game Avett Brothers concert did me in – my shoulders are pink red.

If you haven’t heard of them before and you like good, well-written music, I strongly suggest checking them out.  Here, let me help ya…

Warm also means the return of cold breakfasts.

I have made banana-chia pudding.  I have made overnight oats.  Both are fantastic warm-weather breakfasts.  Naturally, I don’t want to wait to eat either one… so last night I thought to myself: “Self, why not have your cake and eat it too?  Just combine them.”


Then I thought: “Duh.  Sometimes you can be pretty slooooow.”

Then myself rolled my eyes at me and went to the kitchen.

Blueberry-Pear Overnight Pudding

  • 1/2 medium pear
  • 1/2 C blueberries
  • Juice of 1 lemon slice
  • 3/4 C unsweetened almond milk
  • 1/4 C oats
  • 1 T chia seeds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla
  • Stevia, to taste (I used 1/4 packet)

 

Mix everything together, mushing the pear and blueberries a bit.  Cover and refrigerate overnight.

Remove from fridge in the morning, stir, and enjoy!

    How long did the Avett Bros play? I wanted to go to that but never ended up getting tickets.

    BTW – I just sent my mom and email asking about DC restaurants for you. I’ll email you her suggestions when she responds.

      They played a long time – maybe 1/5 hours? I was surprised! They rocked it out (something I think is hard to do in a stadium). Would love to see them in a small venue.

    The Pittsburgh Pirates haven’t been having too many wins this season either LOL.
    I got sunburnt too!!! I’m okay with it because of the warm weather 🙂

    Blueberry-pear sounds like a great combination. I’m looking forward to more summery drinks on patios. Like you, I would rather be sweating than shivering.

    I am loving that your experiencing warmer weather. It was getting hot here for a while, but then the silly clouds just rolled on in, and it started to rain! Blah!

    I have some pears AND Blue berries I need to use up, so I might have to try this delicious sounding oatmeal!

    The Braves game looked like fun!
    I’m like you and I’d much rather be sweating than shivering. I say that now, by the time August rolls around my opinion will probably change. 🙂

    I was at the game too! We didn’t get to stay for the concert though! I thought I was going to melt! Your b-fast looks so good. I need to get some blueberries!

    What a fun baseball game! My parents went to the opening of the Marlins game and they had a blast. Love the blueberry overnight pudding! I can pretty much make this everyday since we only have one season in Miami 😉

    My Hubby is totally in LOOOVE with the Avett Brothers. I like them too, but not like him… he drove six hours one way to Charlotte for their concert last weekend and was trying to swing going to the Braves game to see them again but I nixed that since I’m preggo and due in about 2 weeks. You gotta draw the line somewhere, right? Anyway, we listen to a lot of Avett here and it’s always fun to “meet” another fan 🙂

    Laura, do you cook the mix in the morning? or eat it straight from the fridge? I wonder if the oats will still be raw

      Hi! You do not cook the oats. They soak and soften overnight. Let me know if you try it out!

        Thanks Laura. I usually do the same thing couple of times a week, except that I cook the mix for 3-4 minutes in the morning, let it sit for few minutes and then eat. The liquid proportion is 1/2 almond milk and 1/2 water.

        I will try out your version next time. Thank you!

        I also keep my homemade yogurt, chia, hemp, flax powder, and cut banana overnight (occasionally add muesli) and add honey in the morning before I eat.
