Strong (Wo)Man

April 24, 2014 By Laura

The gym is my happy place.

It really is the most relaxing part of my day.

Sometimes you need to get out of your comfort zone.  We grow from challenges… so I decided to challenge myself to a Strong Man!  That may have been a bit of a crazy move, but whatever…

Bring It On Life

When I arrived at the Lee Haney event, I was surprised to find out that there was only one other female competitor.  That was really intimidating… there was only one other women willing to try this?!  She was really great though – her friendliness and outgoing attitude did a lot to calm my nerves!…

Gut Health Supplements + WIAW

April 23, 2014 By Laura

I’m learning to accept help.

At least when it comes to my gut.

After learning the results of my Alcat food intolerance test, I was determined to do whatever it took to fix it.  With Megan’s help, I immediately eliminated the foods I’d developed intolerances to.

Then I accepted help from a couple of friends that know a LOT about digestive health: Lindsay and Brittany.  They suggested a few supplements to further help my intolerant tummy.

Supplements for Gut Health

For a little more education, check out Lindsay’s post here.  After doing some of my own research, I decided to take the following.

My Gut Health Supplements

  • Aloe Vera Juice – Aloe is a detoxifier and an anti-inflammatory; it soothes the digestive tract and decreases the amount of unfriendly bacteria in your gut which keeps intestinal flora in balance
  • Stress B-Complex – The B’s help to regulate adrenals, helping the body deal with stress (which has a huge impact on digestion)
  • Matcha – Aside from the fact that I like the taste, matcha is a detoxifier and helps with relaxation
  • Betaine HCL – Good for the producing the acid needed for breaking down foods and optimizing use of nutrients
  • Probiotics – Regulates the healthy bacteria in the gut (and the lady parts)
  • Colostrum – Antibodies from cows (vegans, cover you ears).… it’s touted as a “super food.”  It protects the gut, helps the body to maintain proper metabolic levels, may have anti-aging benefits and increase muscle mass and muscle growth, and has been reported to have mental health and sleep-quality benefits.  Further reading said it even shortens recovery time from strenuous exercise.  If it works… whoa.

I ordered all of these from iHerb (where I also get my peanut four).  Use discount code USO924 for $5-10 off your order!

This WIAW is week 2 with my food intolerances eliminated from my diet.  I know I’ve slipped up a couple of times (I’m only human… a sad realization), but I’m militantly avoided everything in the most severe category.

Sriracha Grapefruit Salmon

April 21, 2014 By Laura

Who needs TV when you have Whole Foods?

Yes, I grocery shop for entertainment.

I had no need to be at Whole Foods last Saturday… but the salmon was on sale for $11.99 a pound.  Who am I to turn down a good price on salmon?  A pretty pink slab of fish in hand, I noticed the shrimp.  I almost passed it up because it had the shell and the tail, but the awesome fish guy said they’d steam and shell it for me while I shopped!

This isn’t about the shrimp (but did you know they’d do that?!).

(Mostly) Raw Vegan Taco Salad

April 18, 2014 By Laura

Have you ever met a raw foodist?

I don’t get it…

I do get that it can be fun sometimes though!  Like veganism.  It forces creativity, which I love.  Also, I love bacon.

A raw vegan taco seems strange, but this was so good it even surprised me.  You could go all raw if you took the time to marinate the mushrooms and omitted the lentils.  I’m not that patient.

Raw Vegan Taco Salad

While it didn’t include bacon, I barely missed the meat in this vegan taco salad creation.  Sautéing the mushrooms with aminos gave it a delicious saltiness the was reminiscent of meat.  Plus, anything you top with guac is a win.

I also love having a texture contrast with the crunchy raw bell peppers.  A bite of that with the creamy guacamole and juicy tomatoes was a fiesta in my mouth.  #twss

Vegan Taco Salad

On the side I had some dehydrated kale chips, courtesy of Whole foods.  Gotta have chips with my guac!

  • 2-3 sprays Bragg’s Liquid Aminos (~1/8 tsp)
  • 1/4 tsp cumin
  • Sprinkle of cinnamon

Guacamole

  • 1/2 ripe avocado
  • Juice of 1/2 lime
  • 1/4 tsp cumin
  • 1/2 jalapeño, diced
  • 1 T onion, diced

  • Tomato

Sauté taco “meat” ingredients until tender.

Meanwhile, mash together guacamole ingredients.  Prep desired toppings and cauliflower rice.

Plate rice and stack remaining components on top.

Take a picture (because it’s pretty) and enjoy!

Life is a Jungle Gym + WIAW

April 16, 2014 By Laura

Life is a jungle gym.

Did anyone else read Lean In?

In Lean In, Sheryl Sandberg refers to your career being a jungle gym rather than a ladder.  The same goes for life.  The secret, in my opinion, is to be flexible and not to let things get too under your skin.

Food Intolerance and Healing My Gut

April 14, 2014 By Laura

Food is one of the few things I tolerate well.

I’ll patiently wait for good food even if I’m hangry.

My food tolerance is only mental.  It turns out that I have a shit load many food intolerances.  I’ve never had any allergies to foods.  I don’t experience pain from eating certain things.  What I do get is bloating and gas.  That bloat is something I either attributed to genetics (“I just wasn’t meant to have abs”) or to eating in volume (have I mentioned I love to eat?).

Reading this post by Megan opened my eyes to a whole new possibility.  One can have intolerances to foods without necessarily being allergic.  Who knew?!  In fact, many of the foods people are allergic to (gluten, nuts, whey) I don’t have intolerance issues with.  It’s all the other stuff that troubles me.Food Intolerance 101…

Strange But Good: Coconut Jicama Porridge

April 11, 2014 By Laura

There’s more than one way to make a bowl of oats.

Breakfast without carbs is just wrong!

Going without oatmeal or bread is not an easy task.  I refused to believe I had to do it for the cleanse.  Oats don’t have to be made with oatmeal!  I’ve made a paleo version before.  However, making oat-less oats without eggs made it a little harder… but it can be done with the help of a strange, but good ingredient: Jicama!

Coconut Jicama Porridge

Jicama can do anything.  Nachos, edamame salads… and oat-less oatmeal.  However, I prefer to call this porridge because a) I left it a little more moist that I would my oats and b) I think using words like porridge makes me sound sophisticated and British.

You can use protein powder or leave it out.  Simply increase the liquid if you add protein.  I really liked the additional creaminess it adds, making it even more oatmeal-like.  Toppings are the best part – I used strawberries and kabocha.  I’ve also done it with blood oranges (awesome with the coconut, btw).

Jicama Coconut Porridge

Trust me on this one.  Really.

Coconut Jicama Breakfast Porridge - filled with protein and fiber to leave you satisfied until lunch

Coconut Jicama Porridge

The Base:

  • 1 C raw jicama rice
  • 1/2 C unsweetened almond (or coconut) milk
  • 1 tsp coconut oil
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger

My Adds:

  • 1/2 scoop pea protein powder (mixed with ~1/4 C water to thin)
  • Strawberries
  • Kabocha squash (pre-roasted)
  • Ground flax

Peel jicama and chop into chunks.  Place jicama in a food processor or blender and pulse until a rice-like crumble forms.

Place all ingredients in the porridge “base” in a pan over medium high heat.  Cook until mixture starts to bubble.  If using protein, add it here.

Continue to cook until most of the liquid is absorbed and mixture becomes creamy (~5 mins).  Taste and adjust spices or add sweetener as desired (I didn’t need any).

Transfer to bowl and enjoy!

Makes 1 serving.
