Eggnog Baked French Toast

January 2, 2015 By Laura

Strange can be simple.

Simple is strange in my kitchen!

This recipe consists of simply two things: bread and eggnog.  It’s what we had for breakfast brunch lunch linner (we like to sleep) on Christmas morning.  And a giant side of champagne because all the rum Mom dumps in her eggnog would have cooked out. 😉

We did get a little complex with the homemade eggnog and using chocolate chip brioche.  I neglected a picture, but I also made fresh whipped cream with coconut rum to top.  You don’t have to get that fancy… but it didn’t suck.

Also served was scrambled eggs with spinach and onion for protein and greens.  And bacon.  Because bacon.

Mom likes to set a fancy table.  This one had a gorgeous centerpiece, a charcuterie, ambrosia, and a magnum bottle of sparkling from Schramsberg.

It was so good we didn’t worry about opening presents until almost 2!

Christmas morning

It’s a little past the holidays, but why not keep celebrating and try this out?  It’s strange… but good!  Besides, the eggnog is on sale at Whole Foods! 😉

  • 1 loaf bread, cubed
  • 2 C eggnog

Dip cubes of bread in the eggnog.  Place slices evenly in a greased pyrex dish.  Pour any remaining mixture over the slices.

Cover and refrigerate overnight.  In the morning, preheat oven to 400.  Bake for 20-25 minutes (until poofed up and golden brown on top).

Place on rack to cool slightly before cutting and serving.

Makes 8-10 servings.

That magnum bottle was goooooone, plus 2 more standard sized ones.  There were 7 of us!  5 of the 7 were drinking…

Do you like eggnog?  I never have… but I love it baked!

How was New Years Eve?  I have much to share!  Later…

Top 10 in 2014

December 31, 2014 By Laura

Happy 2015!

Almost.

Vegas and I escaped to Lake Tahoe for NYE and some other shenanigans, so today’s WIAW post is a look back on the top posts of 2014.

Thank you to everyone for helping make 2014 one of the best yet.  I’ve loved making new friends, learning a lot, and eating a TON of (strange but) good food.

Without further adieu, here are the top 10 posts you thought were good (and likely a little strange) in 2014.

10. 3 Surprisingly Quick Meals

Stuffed French Toast Egg Wrap
Here are three meals that I threw together quickly when what I had on hand.  They look fancy-ish, but they were incredibly easy (and fun) to make: Stuffed French Toast Egg Wrap, Squachos (nachos… but with squash), and a Pressed Bison Wrap….

One Big Christmas Party

December 29, 2014 By Laura

Christmas as an adult is the best.

Not that being 8 was bad either…

My sisters, my mom, and I are of the age where we’ve become friends.  This makes Christmas one big party.  We weren’t interested in gifts as much as we were in hanging out, cooking, eating, and getting toasty toasting.

My sister came from Portland with her puppy, my grandparents were there, and Vegas was in town.  All of us packed in for 48 hours of fun.  Here’s how we do it in the ‘burbs of Atlanta:

A Perfect 10

December 22, 2014 By Laura

I am not-so-secretly a teensy bit Type A.

In my head, I hide it well… but no.

1 more day until Vegas gets here for the holidays.  I Can’t Focus.  So I make lists (you’re not the only one Meghan).  Lists of things to cook, places to take Vegas, items to remember to bring to mom’s for Christmas, errands to run, random tasks to complete before Vegas gets here… it’s all fun to me though.

So today I bring you a list of fun things I’m focusing on to pass the time while waiting for Tuesday.  It’s a perfect 10.  Because I like lists of prime numbers or 10.

1. House Plant’s Mate

Flowers arrive from Vegas on the regular.  Last week’s delivery was a friend for House Plant – Christmas Cactus.  Now we both have mates from the desert.

Beet Protein Pancakes [Recipe]

December 19, 2014 By Laura

The (Christmas) beet goes on.

I’m so festive-feeling that even I want to slap me.

But how awesome are red pancakes in the winter?!  Especially with they’re delicious and trimmed in white.

Oh… and they have a not-so-hidden healthy ingredient.  Beets lend their color to these festive ‘cakes.  It’s strange, yes.  But I’m telling you… it’s good!

Beet Protein Pancakes

I use the new Quest vanilla milkshake protein powder in my pancakes.  It’s flavor really is fantastic, and it bakes like a champ.  These tasted like a beet milkshake pancake.  In a good way.  Really….

Thai Peanut Baked Tofu + WIAW

December 17, 2014 By Laura

Don’t fight the festive.

My former Grinch-self is kicking me in the shins.

As advertised, Vegas and I got a tree.  Vegas did the lights (after a debate over whether wrapping or running lights up and down is better).  We hung ornaments.  There was Christmas music and champagne.

This, after being opposed to Christmas decor of years.  My former self thought it was a waste of time and money, not to mention messy.

Our tree

My new smiley-self loved every minute of it.

(And that’s not just the wine talking.)…
