Apple Peanut Butter Soufflé

Soufflé is really a fluffy egg dish.

Winter makes me want fluffy things.

A soufflé is a “light, fluffy baked dish made with egg yolks and beaten egg whites combined with various other ingredients.”

If you can fluff an egg in the oven, why not in the microwave?  It sounds strange… but it’s good!  And quick.

Apple PB Souffle

Since my competition, I have quick eating chicken first thing, but I have yet to stop running late and shoveling down eating breakfast in the car.  A microwave breakfast is just the thing to make on the fly and go.

What better combo than peanut butter, apple, and egg?  Protein and sweet, carb-y fruit to begin the day right.  I love berries, but I missed heartier fruit during prep!

Apple PB Souffe

I scooped this out into a to-go cup after taking pics.

Apple Peaunt Butter Souffle

Apple Peanut Butter Soufflé

  • 1/2 C egg whites
  • 1/4 tsp no-salt baking powder
  • 1/4 tsp butter extract (or vanilla)
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • Pinch of cloves
  • 2 T peanut flour*
  • 1 small apple, chopped

In a small (cereal) bowl, beat eggs, baking powder, and extract.

In another small bowl, combine remaining ingredients, tossing with apple pieces to coat.  Add apple mixture to the egg, stirring to combine.  Microwave for 1-1.5 mins.

Remove and top as desired (I used more apple and freshly grated nutmeg).

*Note: You can also use coconut flour or a combo of the two here – just as delicious but a more cake-like texture.

    To hell with all that trouble about closing the oven door ever so slightly for fear of making your souffle collapse! Microwave it all the way 😛

    I’ve yet to perfect the art of apples in desserts, they’re either too soggy or still to crisp. I mean they taste great, y’know, cause it’s dessert and all, but still 😛

    This looks like just the ticket though. Egg = The best secret ‘secret’ ingredient 😉

      I am with you on the apple problem -that another reason the microwave works well. It cooks such a short time they don’t get soggy!

    I have a microwave since only ONE year and i love to make quick things in it!! This one sounds so winter-y delicious and comforting. My personal favorite are mugcakes in all kind of versions!!

      Definitely! They are the same thing, except peanut flour has nothing added (PB2 adds sodium and sugar).

    Gotta love a quick micro-cake to save the day…err, breakfast! My favorite breakfast fruit right now is persimmons, but I also love apples and bananas…though I rarely ever have bananas because they always go bad on me before I’m in the mood for them!

    Seriously, I can’t believe Thanksgiving is next week! Gaaaah!

      I never buy persimmons… that needs to be remedied. The banana thing surprises me – I either just buy 2-3 a a time, or bread (pancakes?!) or freeze them for smoothies.

      Wouldn’t a Blend Thanksgiving be fun?!

    My favorite quick breakfast is the protein shake I make for me and Vishnu. Just throw everything in a blender, wait 40 seconds, and you’re done! And as far as breakfast fruits are concerned, bananas win…hands down!

    Apples and peanut butter are always a classic! If I need to eat on the run I’ll usually throw together some sort of yogurt bowl, and if I’m reaaaaaally running late, a Quest bar with some peanut butter.
    Favourite breakfast fruit: banana. Bananas just always seem appropriate with breakfast.

    This is such a great idea! Fav breakfast fruit lately has been raspberries. Totally not in season though. And you are absolutely right – being around family next week most definitely will be strange enough!!

    What kind of butter extract do you use? The one I use always makes it taste like alcohol…which I certainly have no problem with, but I wouldn’t mind if it tasted like butter!

      It’s the brand from Whole Foods… Frontier, I think? It’s my favorite for any flavor – definitely not the heavy alcohol taste.

    Yum! I can’t wait to try this, as I’ve been loving egg and fruit combos lately! (And I’m all too familiar with the grabbing-breakfast-while-running-to-the-car feeling!) My favorites for breakfast are apples, berries, and pumpkin of course! I tend to go with oranges for snacks, and peaches or berries for dessert.

    I always have fruit for breakfast and I would have to say my favorite is a combo of blueberries and raspberries. Greek yogurt, my fruit combo, chia seeds, and nut butter is probably my fastest go to breakfast. No chopping, a few measurements, and I am good to go. 🙂

    You might not be late in the morning if you didn’t stop to take pictures of your breakfast. Food blogger problems, huh. I’m always running late too, even though I get up hours before I actually leave the house. Time management issues right there.
    I like apples and peanut butter. I think they’re a wonderful combo. The eggs though…yeah I’m a little skittish on that one, although I did put apples in a quiche so I guess it’s not that far off.

    I cannot believe I’m not the only one who does this.
    Gaaaahhhh….. I feel less alone!

    I do it the same, too…microwave and and baking soda and everything!
    I love it when I make it with lots of eggs it shrugs out of the container onto the plate like a loaf (if I use a tupperware) or cake… that way I can let it cool, top it and run out the door and eat it hand to mouth in the car when I am late.
