Sometimes there’s no shame in staying in bed half the day.
Especially when the last couple of weeks have been chaos!
Last Monday I depicted pre-conference life. This Monday is recovery life. Marvelous recovery. Recovery life started with sleep. Since I couldn’t take pictures of that, we’ll pick up with the wakeful part of the weekend.
I think the song inspired these hanging clean and presses. (I have no idea where that super-country accent came from. I blame Amy Ray.)
Sweet Potato Pie Waffles
- 1/4 cup raw rolled oats
- 1/3 scoop vanilla protein (I used 11g Growing Naturals)
- 1/2 T coconut flour
- 50g sweet potato (cooked)
- 1/2 C egg whites
- 1 tsp pumpkin spice
- 1/4 tsp baking powder
I’m back to work this week… this means fewer waffles. *insert look of horror*
