Easy Tomato-Basil Cottage Cheese Crepes are a perfect, healthier breakfast. Β No one will guess that these savory crepes are packed with protein!

Immediately after I posted these on Instagram and said “you’ll never guess what’s in them”, a friend replied “if it’s cottage cheese, I’m out.” Β *sigh*

Even the most passionate cottage cheese hater can get on board with these. Β The small curd is pureed into a smooth batter, alongside oats and egg whites. Β If you don’t tell your significant other/kids/hater about the sneaky health-factor, they’ll gladly gobble them down too!

Easy Tomato Basil Cottage Cheese Crepes

One serving of these crepes has only 235 calories, and packs 30 grams of protein. Β I’m not sure of the stats on the crepes I ate in Paris… but I’m willing to bet they aren’t quiiiiite as good. Β Rather than a boat-load of white flour and milk,Β these are made with oatmeal (my favorite Farmer Direct oats) and egg whites.

There’s nothing wrong with enjoying the “real deal,” but these crepes are a healthy breakfast you could actually eat every day. Β It’s also a fabulous savoury dinner.

(Side note: spelling savoury with a “u” makes me feel classy.)

I don’t need to tell you want a perfect combo tomato and basil is. Β Those two simple flavors can make anything taste fancy. Β In reality, these tomato-basil crepes are easier than making an omelette.

They’re also great cold, making them a great meal prep item. Β The balance of protein and carbs also makes them a perfect post-workout option. Β We all know how important that protein is, right? πŸ˜‰

Don’t worry… I didn’t forget WIAW!

You already saw what I ate for breakfast (above). Β What you didn’t see is that I made it twice. Β The pretty pics are actually lunch. Β Breakfast… well, let’s just say this recipe doesn’t work as well without the oat flour. Β I was so pissed that rather than take a pic, I threw the plate across the room. Β Kidding! Β But I did curse a little before hangrily eating it anyway. Β #failboat

For dinner crepes were not an option. Β I sautΓ©ed spinach and shrimp, then topped it with cherry salsa (recipe coming Monday!). Β There was also some avocado on the plate, though it’s totally covered.

Plus an unpictured piece of dark chocolate and glass of champagne. Β It was going to bad… what choice did I have? πŸ˜‰

    I love the combo of basil and tomatoes! Which is a funny thing because I used to hate basil (weird, I know). And tomatoes, yum! I wish they didn’t break my face out like they do, but during summer, I regularly cave in and just can’t help but indulge in a pint of baby tomatoes for a snack–yum!

    I hate to say that I am one of those people who can’t even look at cottage cheese! It started when I was a kid and hasn’t changed lol

      LOL! It’s not an uncommon story. At least with this recipe it’s blended… I think the hater would like it (as long as it’s not a flavor thing). This is a good way to avoid the texture.

    Oh this is such a genius idea! And I’m sure there are so many different ways you could use the crepes. I’ve never had savory crepes, I think I would like a ham and cheese or veggie one though πŸ™‚

      Thanks! We started eating them more in France, and now there’s a savory crepe place just down the street. So many good flavor options!

    These look SOOOO good. Perfect for summer. Tomatoes and basil always remind me of summer because I get them fresh from the garden when I go home. I love blending cottage cheese and using it in different ways, too.

      I’m so jealous of the garden! We tried to grow basil but there too much sun. It burned up in no time!

    I’m actually a cottage cheese fan, but I prefer it on its own….ish (like with fruit, or a drizzle of honey and nuts) to using it in dishes. I know a lot of people prefer it to ricotta though.

    these look absolutely fantastic, I’m def gonna try out for breakfast this week! Have you tried to make a bunch and freeze, was wondering if they would hold up.

      Thanks Jen! Please let me know how you like them!

      I haven’t tried to freeze them, but I think it would work. They’re not unlike pancakes. You’d just need to put some parchment between them so they don’t stick together.

    I love savory crepes more than sweet! as for cottage cheese, i have no issues eating it when it’s there but it’s not something i buy or crave.

      Have you been to that new french place in Hillcrest? I can’t remember the name right now, but it’s on University. They have a huge list of savory buckwheat crepes.

    Oh yea, I love crepes!! Have you been to Crepes & Corks in Del Mar? They have a Mediterranean veggie-packed one that I’ll get if I’m being reasonable and not eating a Nutella crepe for my meal haha
