7 Tofu Meatless Monday Recipes

I’m a big meat eater.

That’s an understatement.  It’s also what she said.

Oddly enough, I went vegetarian for a while and even vegan for a hot minute.  I realized my body does better with meat in my diet, but I learned a LOT about ingredients and creativity from those meatless months.

This Meatless Monday MMAZ Heather chose one of my favorite ingredients: Tofu.  In honor of my meat-free days, I opted to do a round up of some of my favorite tofu recipes.  I still include these in regular rotation!

Grilled Protein PB&J

I should add my super-technical method for pressing tofu: slice in half, wrap in paper towels, and stack cookbooks on top of it for 15 mins. ;)

Do you like tofu?  How do you prepare it?

What’s your favorite non-meat source of protein?

I love tofu! There are so many thing you can do with it. Your recipes sound great, can’t wait to try them. Especially the Vegan Goat Cheese stuffed tomatoes. Yum. My favorite tofu recipes are my pot pie, quiche (can you tell I love crust?) and my current favorite breakfast, fried Tofu sprinkled with a little black salt..tastes just like eggs!

    1. Laura

I thought of you as I was writing this. :) Please let me know if you try any! I’d love your feedback. I need to try your tofu-eggs! Sunday it’s on!

  2. Angela @ Happy Fit Mama

I like tofu but I don’t eat it too often. My favorite is making an orange tofu stir fry but blending into sauces works very well too.

  3. Krista @ Tiny n Fit

I am not really a tofu fan but have made tofu meals before- a tofu stir fry!

    1. Laura

Stir frys are the best! So easy and they take on any flavor so easily!

  4. Carla

how stunning is that vegan goat cheese tomato?!?!
ahh if only mine would look that way :)

    1. Laura

Thank you!!! They are actually MUCH easier to make than they look!

  5. Kim @ FITsique

I tried tofu, twice. Couldn’t do it either time. But I always see people using tofu in shakes or in desserts, and then I wonder if I would like tofu in that form. I know its supposed to take the flavor of whatever you are making, but how does it taste in shakes/desserts?

    1. Laura

Tastes like nothing… I like it in shakes for the creaminess!

  6. Linz @ Itz Linz

    jalapeno poppers?! checking out now!!!

  7. Lucie@FitSwissChick

I like Tofu – not my favorite, but it’s so versatile and I buy it when I’m sick of my chicken. Lately, I made a scrambled tofu with cinnamon and berries. It was surprisingly delicious!
This sandwich pan you own – I’m so jealous.

    1. Laura

It’s just a George Foreman grill! Do they have those there?

  8. Laura @ Mommy Run Fast

I do like tofu! Especially marinated with soy sauce, garlic and a bit of sesame oil and baked/broiled. Mmmm. You’re right- meat eaters can eat meatless meals, too. :)

  9. Christine @ Love, Life, Surf

haha I use that same super technical tofu pressing method. I was vegetarian for a long time and ate lots and lots of tofu. Not anymore though I do still like tofu and tempeh. These look delicious!

  10. Heather (Where's the Beach)

Yep, use tofu all the time. Finally got a tofu press (well, got 2 now). One method I like, but haven’t done in a while, is to freeze if for a few days. Totally different texture.

    1. Laura

Freezing is so good! I think have a slab in there actually…

I prefer a meatful monday . . . so I think I’d swap out the tofu on these delicious looking recipes. I’ve said it before, but those are the cutest tomatoes I’ve ever seen!

    1. Laura

You could definitely do that with many of these. Maybe not the smoothies though… ;)

  12. Jody - Fit at 56

I am really not a tofu fan – I think it is the texture more than anything but you have some great recipes!

  13. Nicole @ Fitful Focus

That grilled protein pb&j sounds really interesting. I’ll have to give that a try!

    1. Laura

Let me know if you do! That’s one of my favorites. :)

  14. Hannah @ CleanEatingVeggieGirl

Tofu is seriously one of the most versatile foods ever!! One of my favorite things to make with it is a chocolate pie!

    1. Laura

Ohhhh… that is a great idea!

  15. RavieNomNoms

YUM! I like doing fully vegan and vegetarian things sometimes too, but I am the same way. My body does better with meat in it.

  16. Sarah

We had to add protein to my youngest daughter’s diet with gymnastics and she doesn’t eat much meat and one of the first things I made her last year was a whipped peanut butter and tofu PB&J!

    1. Laura

My little sister is the same way and she was a gymnast – it’s a great way to get protein in after those tough workouts!

  17. Parita @ myinnershakti

Thanks for sharing! I can never have enough delicious tofu recipes! :)

  18. Nicole @ FruitnFitness

I eat meat but sometimes find it fun to cook with tofu. I’m not to adventurous when cooking with tofu but almost always order it when out for chinese

    1. Laura

I love ordering it at Asian restaurants too! Perfect for those flavors. :)

  19. lindsay

my stomach does well with tempeh or sprouted tofu, so i gotta make some of these. I adore your creations, as always

  20. Gina @ Health, Love, and Chocolate

I’m not a vegetarian but I definitely love my tofu and tempeh once in a while. These all look so good!

  21. Shashi @ RunninSrilankan

Tofu is a big source of protein for me – I love it grilled, fried, baked and curried; but I have yet to have it in a shake or any non savory dish – that protein pb&j and carrot cake shake have me intrigued

    1. Laura

It works surprisingly well! Tofu can take on any flavor and adds perfect creamy texture.

  22. jill conyers

Great recipes to add to my collection. I just started cooking with tofu regularly a few months ago. At first there were hilarious fails but I’m slowly getting the hang of it.

    1. Laura

Oh man… I am all to familiar with those fails. :)

  23. Choc Chip Uru

Who even needs meat with these delicious recipes :D

    Cheers

  24. Court Star @ StarSystemzFitness

I LOVE tofu! I am so glad you did this round up as I let it out of my diet for awhile but was thinking the other day I need to go out and buy some tofu! Thanks for sharing beauty xo C

    1. Laura

I’m so glad it was timely! Let me know how the re-introduction goes!

  25. Heather @ Kiss My Broccoli

Confession: I never press my tofu. 8O I go through phases with it, but I really love tofu and hate to hear people diss it (especially when I know they’ve never even tried it before). Actually, I can’t help but think back to my days of watching Clarissa Explains it All where her mom used to “force” them to eat tofu and other healthy dishes! Haha
