Mocha Mint Protein Muffins + Giveaway

M is for Monday.

I swear I didn’t plan this.

This weekend had an M theme, which happens to work really well for Katie’s Marvelous Monday link up.  See what I did there? 😉

1. Meringues

My company is a cloud-based technology. Rather than handing out boring collateral like pens at the executive meeting, I ordered cloud-like meringue cookies!  Dyed blue and stuffed in pumpkins for Halloween.

2. Muscles

Speaking of 2 weeks to go, I had my second to last posting practice with my trainer before my competitions!  I have never loved posing, but I’m learning to look forward these Saturday sessions – I get to spend the day posing and training with some of the most inspiring competitors around.

This Saturday’s session made me more excited than ever for these next competitions, and for the next year where I’m 100% committed to hardcore BUILDING.  I love lifting.

3. Mom

This weekend was my mom’s birthday.  She’s turning 29, once again. 😉

I was really excited to have her over for brunch.  She opened presents  and I made her my jicama nachos with shrimp, pico, yellow tomato, and #yolkporn.  She save this #strangebutgood creation two thumbs up, which means the world since she is the one I have to thank for my love of food and creating in the kitchen.


4. Muffins

Not just any muffins.  I accidentally made Mocha Mint Protein Muffins.

These were going to be a version of my coffee pancakes.  I accidentally added too much egg, so I decided to bake them instead. This is what a Thin Mint would taste like as a muffin.  Talk about an awesome mistake!

I used Dunkin Donuts’ seasonal Mocha Mint coffee, but you could use any flavor and add extracts.  I added peppermint extract because the DD coffee isn’t actually very mint-y.

Mocha Mint Protein Muffins

Mocha Mint Muffins

  • 2 T oats
  • 1 T coconut flour
  • 1 T (10g) chocolate protein powder
  • 1 tsp chia seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp no-salt baking powder
  • 1/4 C egg whites
  • 1/4 cup brewed coffee (I used mocha mint)
  • 1/4 tsp peppermint extract
  • 6-8 drops vanilla liquid stevia
  • Optional: chocolate chips, cocoa powder, nuts

In a small bowl, mix dry ingredients. Add wet ingredients and stir to combine.

Pour into prepared muffin tins and bake ~25 mins.

Makes 2 muffins (or 3 squares in my slightly smaller silicone mold).

Note: I learned that this recipe can be doubled when I made more to have for breakfast this coming week.

This mistake was even sweeter because it gave me a recipe to link up to Heather’s MMAZ.  She told me seeds could count as nuts.


5. Munchies

It’s Halloween.  You have candy coming out the you-know-what.

Just in case you want to give your blood sugar a break, I have a giveaway for one of my favorite bars.  One of you will win a whole box of thinkThin High Protein Bars.


Normally a “thin” bar wouldn’t appeal to me; however, my dad actually got me into these.  When he was getting chemo, all he wanted where the chocolate fudge bars.  Random craving, right?

I came to love them.  The 20g protein is perfect for a quick fix post-workout or on the run.  It keeps you full, gives you a pop of energy, and has 0g of sugar.  They’re also gluten-free!

My favorites right now are the Cookies ‘n Cream and the Chocolate Toffee Nut, but you can choose your own!

I am literally back-to-back in meetings all week.  Between that and gym time, blogging may be sporadic.  Does anyone else think of Clueless when they use the word sporadic?

    And Moms are the best, right? I feel them same, her approval is the most important to me.
    And that’s one great mistake! It’s funny cause I hate to drink coffee, but eating it is different, I like it!

    Happy birthday to Mrs.Strangebutgood! She’s a lucky one to have a twerking little stunner for a daughter. 2 weeks out!? No way!

    I LOVE think thin bars, I smuggled every flavour from the States! Favourite protein filled goody to snack on has to be jerky when I’m in a time pinch- easy, tasty and…salty.

    Happy Birthday to your mom! She actually could pass for 29, and I’m not just saying that! She looks really young! :) Those muffins look amazing too!

    Oh and my favorite protein snack on the go would probably be a smoothie made with protein powder and some frozen fruit thrown in or a KIND bar. Maybe not a ton of protein in the KIND bar but they are a good little snack on the go.

    Thanks for sharing these muffins – they sound GREAT!
    My mom introduced me to Think Thin bars are they are superb! I almost feel like I am eating a candy bar – they taste so good!
    My fav protein pick up is a protein shake or a couple scrambled eggs with marmite and avocado.
    Those blue meringue cookies are an awesome idea!

    Happy birthday to your momma! Despite their name, I love Think Thin bars…one of my faves to date! Greek yogurt with applesauce is my current favorite protein-rich snack :)

    Greek yogurt is definitely my number one. But I also like to make a protein packed combo of peanut flour, maca powder, and cocoa powder, mixed up with some almond milk and eaten with a banana or lentil chips. Yum!

    I found Think Thin bars years & years ago – my 40’s sometime & loved them. At that time I had to search them out – only a couple places sold! They are good!

    OK – the Mocha Mint coffee – does it taste more chocolate or what since not minty? :)

    Course I love the cookies, :) & your mom looks amazing!!!! If she is in her 50’s – DANG! I wish!

    The bobybuilding cartoon cracked me up – love!

    I used to eat these all the time at school. I would put a peanut butter bar in the freezer and it would be like a reese’s cup! I don’t really have a go-to snack, but love nut butters with pretzels or celery

    Those muffins sound fantastic. I still have never used coconut flour. I actually like Think Thin bars – just not the name so much. The PB is my fave, not too sweet. I actually keep them on hand for a quick protein snack or Greek yogurt

    I did not know about those Think Thin bars. I am usually skeptical of stuff like that, but those sound pretty good for you. My favorite protein on the go is cheese, always cheese. It’s probably too much of a favorite, actually :) So I try not to keep too much of it in the house…

    My favorite on-the-go protein is string cheese or the new LaraBar ALT bars, but I’m looking to try something new with more protein and these seem perfect! The flavors you suggested sound great

    You’re so creative on the meringues! I love Think Thin bars, too – I wish they had fewer ingredients, but they’re really good, and great nutritionals! My favorite on the go protein snack is either Quest bars (sorry!), Think Thin bars, Greek yogurt, or string cheese :).

    I go through phases with mint. I was OBSESSED with it this spring and put the NuNaturals peppermint stevia in my smoothie every single morning. But MOCHA mint… that I might have to try! I’m sure it’s delicious (I trust you!)

    My favorite protein to go is either deli roll ups (Boars Head prefered!) from turkey or chicken breast. Otherwise, it’s some sort of protein bar. I’ve never tried Think Thin but would love the opportunity!! 😉 good luck in your competition! To a newer weight lifter, you are so inspiring!!

    I love dry-roasted edamame, especially the wasabi flavor! But I also really enjoy ThinkThin bars and Quest bars when I’m in the mood for something sweet.

    I seriously love the meringue idea. Come teach my marketing classes please? My professors are sleep-inducing and certainly wouldn’t think to order meringues. They are all about the pens. Actually, even better than meringues? Hand out your mocha mint protein muffins. 😉

    I have a dirty secret about my favorite protein snack – I started eating Quest bars occasionally and they are awesome!! I tried so hard to find a low-carb bar that was high in protein without whey, but I was unsuccessful. The secret is out. :)

    I wish I had a favorite! i’m still searching. Lately I make sure my purse has atleast KIND bar or Lara bar in it since I know what’s in those. I haven’t really liked protein bars in the past so I’m always hesistant to buy a whole box.

        Ohhh now there’s an idea!!! can i stick that metal like packaging in the microwave or go for a plate? I just bought a box of ThinkThin bars at Target. They were on sale…… gonna give those a try :)

          Definitely remove the packaging first! Metal in the microwave isn’t good. The sparks are for a second, but the aftermath notsomuch…

    Haha! Omg, Clueless! I swear there are quotes from that movie that will forever be ingrained in my mind! Every time I roll through a stop sigh, I say, “I totally paused! ” Lol

    And dude! I was trying to make pancakes when I accidentally made my kabocha muffins! I need to get back in the kitchen and test that “mistake” again…I’m still not convinced it wasn’t a total fluke even though I wrote down all the ingredients! haha!

    Happy {belated} birthday to your mama! She doesn’t look day over 29!! What did you get her? I may only be 28, but my eyes are like 72…I can’t see that little shit! Lol

    PS, very clever and creative idea on the cookies…even thought I have a hard time calling a meringue a cookie…it’s more of a cookie skeleton! Haha!

      If you need a tester for those muffins, you let me know. I’m so benevolent…

      I got mamma another Longchamp bag. She loves them – last year was the navy on ont he left and this year I got her the tan.

      P.S. I dislike meringues… it was easy to not have a bite.
