Strange But Good: Berry Corny Salad

I don’t particularly like corn.

 

I really am a terrible Southerner.

On a cob it’s too messy, off the cob it gets all mushy when cooked.  When Kat brought corn over to add to our dinner Monday night I realized something – I just don’t like it cooked.  She cut the kernels off the cob and topped our salads with it… uncooked.  Duh.

Raw corn has a pure, crunchy sweetness to it.  That fantastic flavor was lost for me in all the cooked renditions I’d tried before!  How strange to me!  But oh man, it was good.

Inspired by the sweet, I decided to create a spring salad using corn and my latest berry-obsession: blueberries.  The two treats were a natural fit!  I also added cucumbers for a refreshing crunch.

Spinach was my base, but arugula would also be good here.  Shallot was my last add.  The mild onion provided a slight edge to the sweeter flavors without overpowering.

To dress the salad, I wanted to keep it light but thought a creamy dressing would be a nice contrast to my crunchy veggies.  I used Greek yogurt as the base for a lemon and rosemary-laced creation.

It was berry good.

Berry Corny Salad

Berry Corny Salad

  • Spinach
  • Raw corn kernels
  • Blueberries
  • Cucumber
  • Shallot
  • 2 T Greek yogurt
  • 1 T lemon juice
  • ~1 tsp fresh rosemary, finely chopped
  • 1/4 tsp cumin
  • Pinch of garlic powder
  • Black pepper and red pepper flakes, to taste

 

Mix together veggies and berries in a salad bowl.

In a small bowl, stir together yogurt, lemon, rosemary, and spices.

Dress salad and enjoy!

I cannot get enough raw food lately!  It's such a relief after winter to begin eating fresh, local veggies again.

    I love raw corn! Even when I cook corn on the cob, it is just for a minute or two to get it hot. Mmm, crunchy and sweet.!

    I love corn! I usually do cook it and then cut if off the cob. I can’t stand getting all the strand stuck in my teeth. I don’t think that I’ve ever had raw corn and I’m totally intrigued by it and your delicious sounding salad!

    I LOVE CORN, I love it POPPED I love it RAW and right off the grill on the cob, me + corn just go along like bread and butter but with all the GMO madness I have cut back BIG time and stuck to farm fresh or ORGANICALLY certified goodness.     I love corn! Canned, frozen, grilled on a cob, doesn’t matter. But I haven’t had raw corn in such a long time that I can hardly remember what it tastes like. Corn season is rather short here in Germany.
    Fruit plus salad is a perfect match. My favorites include grapefruit, oranges, and apples.

    I actually didn’t even know you could eat corn raw :lol: I love it on the grill the most… either that or popped ;) And a very big YES to fruit on salad. Mangoes, apples, and cantaloupe are my favourite.

      Cantaloupe makes for a great salad! I love it with blue cheese.

    Yum! I love corn in salads, but have only every used it cooked (or kernels from the can, which are nice and crunchy).

    I ridiculously miss corn on the cob right now, as 3/4 of the household cannot eat it. Last summer I furtively ate my corn on the cob in the kitchen, then cut the rest off the cob for the whole family to enjoy. Never tried it raw, but love it cooked, chilled in the fridge, and eaten the next morning.

    I do the same thing with bagels (not the chilled in the fridge part, the furtive eating ’cause the kids can’t partake).

    I’ll be delighted when the kids get out of braces.

    I’m linking up a pizza with a ridiculously long name: Berry Crust Pizza with Chicken, Cranberry, Red Onion and Fresh Mozzarella. It’s about as patriotic as I can muster, but came about because my daughter unplugged the fruit and veg freezer. Lemonade out of lemons, berry pizza crust out of thawed berries.

    WHAT? We can’t possibly be friends. LOL. I love corn on the cob, grilled, roasted, boiled I don’t care. The worst year of my life was when I had braces and couldn’t eat it. And this salad looks fantastic. Love the berry addition.

    I adore corn, but I’ve never thought to eat it raw…I usually go for steamed or boiled on the cob!
    And yesss to fruit on salads. Blueberries and strawberries are particular favourites of mine.

    I love raw corn! There have been a few time I have eaten it right off the cob with dinner and it really is the perfect salad topping. Its a great mix of sweet and crunchy. This salad sounds do refreshing.

    YES! I love raw corn. I like cooked corn, too, but when it is super fresh and sweet, you need nothing more than to just bite right in. :) One of my favorite salads to make a few year ago was a raw corn, grape tomato, and green bean mixture with just a little balsamic and chopped basil.     I detassled corn one summer (with a bunch of hippies) — we ate fresh organic corn right off the plant and WHOA. I have never tasted anything like it since. Just… so sweet and juicy.

        It was cool… two months of physical labor, living in tents (showering outdoors or at the Y). Work hard (and get paid) sun up to sun down then go back and sit around the fire drinking beer and playing guitars and drum circles .. and maybe a wee bit of contraband. *wink*
        Perfect for when I was younger.

    I have never tried raw corn. Truthfully, it’s not one of my favorites either and we rarely eat it. I’ll take it popped in kettle corn form though.

    Mmm, when we were little we’d help pick corn from the garden and husk it, and my sister and I would eat it right off the cob, too. So fresh and crunchy and sweet!

    LOVE putting fruit in my salad.

    This might sound dumb, but I didn’t know you could/should eat corn uncooked. Might have to give it a whirl now! I love crunch in my salad – usually I use hemp hearts and chia seeds to give it a lil somethin somethin.

    what an awesome recipe, babe! :D I absolutely love corn! my parents and I had it the first night they were here to visit me this past week and we had it with grilled salmon! oh it was local corn and oh so sweet! i want it now! never thought of pairing with blueberries! yum!

    I LOVE raw corn. So good on a salad! I’m not really a fruit fan on my salad. I’ve never really liked sweet and savory mixed when it comes to meals. Treats are a different story though. The salad sounds amazing. I need to try blueberries and corn. I bet that is amazing!
