Strange But Good Spaghetti (Squash) Pie

Childhood favorites are no less delicious as an adult.

 

I think they get better!  Probably because you understand how decadent they actually are.

My parents got on the healthy train pretty early.  We very rarely ate fast food, my mom cooked dinner every night, and - while there were plenty of homemade cookies – we also received apple slices and “ants on a log” as snacks.

Side note: Do you remember ants on a log?  It was celery with PB in the crevice and raisins dotted along the middle.

Anyway, one of my favorite mommy-meals was something called spaghetti pie.  It was literally made in a pie dish.  The “crust” was a mixture of spaghetti, butter, parmesan, and eggs.  There was a generous layer of ricotta, and then it was topped with ground beef and spaghetti sauce (usually Prego).  It was carb-filled, fatty, and delicious.

Clearly, this delicacy isn’t encouraged on a competition diet.  With all this cold weather I was craving this comfort food classic, so I decided to remake it… in Strange But Good fashion, of course.

This actually wasn’t too hard to do.  I used spaghetti squash rather than pasta, and replaced the butter, cheese, and whole egg with egg whites.  The filling is still ricotta, but I chose the fat-free version, adding oregano for extra flavor.

Ground beef is easily replaced with ground turkey.  I sautéed it with red onion, garlic, and a spritz of olive oil for flavor.

My marinara sauce was jarred (sorry, it’s been a crazy week!), but I chose a low-sodium, organic option rather than Prego.  I also amped up the flavor by adding fresh rosemary, red pepper flakes, and pepper.  Semi-homemade?

A couple few notes:

  • I’d love to green it up next time with some spinach  or kale
  • It would be fantastic with some shredded carrot and/or red pepper
  • How about a Mexican version?!
  • As I was bragging about texting pics of my pie to a gluten-free friend, I realized it IS gluten-free!
  • I think you could SO easily make is vegan!  Replace the eggs with a couple of flax eggs, the ricotta with whipped tofu (like this goat cheeze recipe?), and the meat with vegan ground beef or TVP.  Someone try (Kristina?) it and let me know!

Spaghetti Squash Pie

Spaghetti (Squash) Pie

  • 1 small spaghetti squash, pre-cooked (easy microwave instructions here)
  • 1/2 C egg whites
  • 1/2 C fat-free ricotta
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 8 oz. ground turkey
  • 1/4 C red onion, chopped
  • 1 clove garlic
  • 1 C marinara sauce
  • Optional marinara mix-ins include: red pepper flakes, rosemary, garlic, etc.

 

Preheat oven to 350 degrees, and prepare a pie dish.

Stir together the spaghetti squash and egg whites.  Pour evenly into the pie dish as the crust (note: this will look too runny, but it isn’t – the egg will solidify in the oven).

Mix together the ricotta cheese, oregano, and garlic powder.  Arrange evenly over the spaghetti mixture, leaving ~1/4 in space around the edge to preserve the “pie” look.

In a large pan, brown ground turkey with onion and garlic (can also use olive oil).  Add marinara sauce and any additional flavors, allowing to cook over medium until warmed (~6-7 mins).

Evenly pour the turkey and sauce mixture on top of the ricotta layer in your pie dish.

Bake uncovered for ~45 mins, or until most of the “jiggle” is gone.

    No way, is this real life. I didn’t know this was possible, but I’m truly obsessed with spaghetti squash. It’s so versatile, I just love it so.
    This looks wonderful. I sure darn hope chia eggs would work for egg whites…maybe it’s time to experiment:)

    I was ecstatic to hear this is glutenfree, as I can’t eat gluten. Going to try your whipped tofu suggestion to replace the cheese since I am allergic to dairy as well.

    wow! what an interesting idea. I totally want to try this. I wonder if I can still find spaghetti squash somewhere. It looks just like a thick pie crust too!

    I can’t think of anything really strange that I ate a kid though I loved vegetables even then and I remember all the other kids at my table recoiling in horror at my eggplant parmigian and steamed broccoli.

        It’s not hard to find in season, but once the season passes the vegetables and fruits of that period disappear.

    Have you ever tried Chef Ricardo’s pasta sauces from Whole Foods? I bought it once after sampling some at the store and it’s incredible…and the sodium content is pretty decent for a jarred sauce too! Man, I was JUST at WF’s today…should have picked some up!     Hmm, I wasn’t really too strange as a child (I know, funny, right?). I was just a really picky eater…but I DID put ketchup on pretty much anything…even steak! Lol

      I haven’t had Ricardo’s… will have to see if my EWF carries it. The sauce I used was from the farmer’s market (suprise, surprise), but it’s the Silver Plate brand which I think is at several major stores too. It’was pretty good, but I always doctor it up.

      I was picky too. I didn’t even like ketchup.

    Yay for spaghetti squash pie! I just posted last week about making one that included goat cheese, spinach and sundried tomatoes. It was awesome! Your version looks just as good (love the added protein to make it a complete one-dish meal), and agree that a Mexican version needs to be tried next! :)

I never did, mainly because I became obsessed with recreating Jungle Curry, but that might be a fun little experiment….get out of my brain!!! [Although, to be honest, I don't know where my idea came from for that, since I don't think I ever had spaghetti pie in my life.]

    I’m so jealous that I can’t get spaghetti squash near me :( :( !! I would definitely be making this right now!!! It looks like the best comfort healthy food ever!
    I’ve never had ants on a log..i can’t eat celery!! it’s literally like the only veg that i cannot eat..it makes me gag!! i have terrible childhood memories of being made to eat it in nursery..ever since then not a piece of celery has passed my lips aha!
    i generally had quite strange tastes as a child..i wouldnt eat sandwiches..and still don’t like them ahah!

    As for ants on a log? Yes I remember them and I hated them as a kid (i wasn’t much for raisins). Now a days I love celery and prefer to just eat it raw (no toppings necessary).

    Hahaaa, ants on a log–My mom tried making me that, until she realized I just picked off the raisins, licked out the PB, and left behind piles of celery and raisins. It was easier to just hand me the PB jar and a spoon…Things haven’t changed much ;) This sounds soooo good and homey–That crust is brilliant, yup, I can think of a bunch of ways to switch it up (Mexican style would be a win, if you ask me–maybe a fajita pie??).

      Ohhhh… if you did macademia ricotta, I’d whip the tofu with nooch and mix it in with the spaghetti squash, and then do the macademis layer… and I’d bring me a slice.

    I’ve been waiting for this recipe!! I’d never heard of spaghetti pie until you talked about it and have been curious ever since. It looks amazing and is living up to the hype I’ve created for it in my brain. This is going on my grocery list for next week. Did you try freezing the leftovers? Do you think it would do OK frozen? I think I could eat this every meal for a week but I’m just wondering if it would freeze ok.

    And YES I remember ants on a log! Recently I added some raisins to my spoonful of peanut butter and it was sooo good. And yes, I eat spoonfuls of peanut butter when I’m feeling munchy.

    it sounds like we grew up in the exact same household – yes, we had sweets but they were all homemade. mom was home starting dinner by 3 in the afternoon, always a Made By Mom dinner on the table (fast food was exceptionally rare). back then I loved to eat at friends houses, they had the “good food” – but now I appreciate it of course.

    Ok so I did make it tonight and it looked amazing!! once i cut into it was like soup underneath! #fail.. still ate it and it was delish just not sure what i did wrong. I did bake the squash yesterday and had it in the fridge so not sure if that kinda messed it up. will make again for sure. any thoughts what i could of done wrong?? either way ur recipes rock. u have a new fan ;)

      I’m so sorry it was soupy… I think that would either be becasue you needed more squash or because it wasn’t baked long enough. You want to leave it in the oven until it’s not jiggly. But I’m really glad youliked the taste!!!
