How can you go wrong with fruit?
Unless it’s old and mealy…
I’ve been all about fruit this week. Mom and I went to the Buford Highway Farmer’s Market last weekend. This epic food market just keeps going – we spent nearly 4 hours there! It was filled with foods I’ve never even imagined before.
Like egg fruit (also known as canistel):

This delicious fruit has the consistency of a hard-boiled egg yolk… sounds strange but I SWEAR it’s fantastic. It’s taste is sweet with a vanilla-like.
The inside reminds me of an avocado with its large seed:
After some reasearch I learned that you can use it wherever you’d use a winter squash or pumpkin, and that it makes a tasty milkshake (no word on whether it brings all the boys to the yard).
Naturally, I created a protein-rich midnight snack. This was made much like my Blueberry Cheesecake Fluff. If you can’t find egg fruit, this would also be good with pumpkin or butternut squash. This is one thick, creamy vanilla pudding.

Egg Fruit Cheesecake Pudding
- 1/2 C egg fruit
- 1/2 C no salt cottage cheese
- 1/2 scoop vanilla protein powder
- 1/2 tsp cinnamon
- 1/4 tsp almond extract
- 1/4 tsp butter extract
- 1/4 C unsweetened almond milk
Put ingredients in a blender and mix until smooth.
Top with your favorites – I made a coconut fluff from equal parts coconut flour mixed with almond milk and sprinkled cacao nibs on top.

No access to egg fruit? I have another fruity creation!
For lunch this week I took my no salt turkey deli meat and made a fruity salad with it. Mixing it up with Greek yogurt added a terrific tangy creaminess. This was strangely complimented by a “sweeter” combo of blueberries, cardamom, and nutmeg.

Nuts and Berries Turkey Salad
- 3 oz no-salt deli turkey, shredded
- 2 T Greek yogurt
- 1 T coconut vinegar (any white vinegar would work here)
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp black pepper
- 1/8 tsp nutmeg
- 1/2 C berries
- Walnuts

To the blog world this is probably normal but to others, this is going to sound strange: a bowl of milk, applesauce & nuts- so strange yet SO good

I would love to have a market like that available. I think I’m pretty lucky with the market I do have, but it’s basic altough it’s a great savings over regular supermarkets. Just that you get so much because it’s all bagged. That pudding sounds wonderful, Laura. I’ll have to keep my eye out for egg fruit if I’m ever in a bigger farmers market. Have a great day!

I guessed the theme! [Totally by accident...] I’m glad my creation fits into the Strange But Good category of the week, although I’d love to get my hands on that egg fruit. [It's a vegan-approved type of egg, right?
] Now you’ve got me thinking about how to use the endless winter squash on my counter…and again, with that tofu in the fridge. Maybe the more I keep saying it, the more likely I will make it happen. Like The Little Engine That Could: I think I can, I think I can…
Obviously I haven’t had my coffee this morning.

Laura,
That egg fruit looks really cool. I’d love to eat chicken salad out of boats of it, but if you’re supposed to cook it like a squash, then waffles it is for me.
Since we’re talking strange fruit, I linked up my favorite fruit on a pizza–Ham and Banana pizza. If I have bananas at the perfect amount of ripeness (just barely ripe, not starting into perfect-for-banana-bread-ness) this pizza rocks.
Have a good weekend!

It’s really good raw too – I think chicken salad is a fantastic idea! I may try this tomorrow, in fact…
Banana?! Sounds strange but good to me! I love how they caramelize.

Never seen egg fruit… I’ve had star fruit and thought that was the weirdest, I don’t see it in the store very often. The weirdest thing I’ve had this week was a cherry chia kombucha… it had the seeds just floating around in it! I had to show my boss because I bought it at lunch and it said it had trace amounts of alcohol… lol. I am happy because I like the taste and the texture of all the seeds doesn’t bother me so I will definitely get this again.

Just remembered this… Next time you’re at the Dekalb farmer’s market, pick up a mamey. It was kind of thick and creamy like how you describe the eggfruit, but it had a kind of pumpkin pie with a hint of cherry flavor. I used it to make a smoothie and it was to die for. I forget what part of the year I saw them, so they may not be in season right now.

Oh, egg fruit! Completely new to me, but I’d be up for trying one if it ever crossed my path! I also like how they are heart shaped when you cut them open.
My food has been so boring lately. A couple weeks ago I was craving deli turkey, but I kind of “gave it up” so to speak, since it’s usually loaded with nitrates and sodium. I found the no salt added Boar’s Head Turkey, and it’s pricey, but it did the trick. It wasn’t as tasty though- they really know how to trick your tastebuds with those additives! Lately I’ve been making chicken salad concoctions though, with baked chicken breasts, and added whatever I have on hand, veggies, hummus, greek yogurt, etc. It does the trick for my sandwich cravings. Probably the only thing out of my ordinary I’ve been making lately. :/
Happy Friday!

It’s funny – I worried the no salt turkey would taste funny, but I’m so used to low sodium now that it tasted completely normal.

I had no idea such a fruit existed! Which now means it’s a goal to try one. Plus I’m a sucker for hard-boiled egg yolks, used to pull off and toss the white and just eat the center when I was kid. Okay, who am I kidding? I’d still do that, if it wasn’t for that pesky protein business…
