Blueberry Cheesecake Fluff + WIAW

I must confess something.

Don’t worry, this isn’t another TMI post.

I haven’t had a perfect Junk-Free January.  Being sick and doing some crazy endurance work has derailed me.  However, I did lay off the booze and I really don’t regret the times I ate deliciousness like this:

Waffle House chocolate chip waffle

I listened to my body and my body wanted calories.  Trashy calories.  Post-stomach flu and post-crazy racing I’d lost a couple of LBs.  They have been found. :)

This could also have something to do with a killer Chest and Bicep workout with my trainer on Monday.  We did supersets,  alternating between chest and bis, to get done in an hour.  I benched pressed about 8 lbs more than my body weight and then preacher curled a little more than half my body weight.  And now I can’t lift a glass of water.

I’m back on track for this WIAW.  Still hungry ALL the time, but I’m keeping it clean and fueling my body with good stuff.  It’s crazy how your body still demands replenishment days after a big event!

Check out my 7 meals below, and then click here to head over to Jenn Peas and Crayons to get to see how others dined this week!

Meal 1:

After my morning cocktail (mix of Apple Cider Vinegar, Glutamine, and Fitmixer Aminos), I broiled a grapefruit according to this method with coconut butter, cinnamon, and cardamom.  That was “dessert” after I demolished an herbs de provence egg white omelette.

Broiled grapfruit and eggs

Meal 2:

A rare thing happened - I went to the gym in the morning.  Never fear – hell didn’t freeze over.  I’m still not a morning person – this trip wasn’t exactly early.  It was a killer leg day though!

I packed a protein-rich treat to refuel in the car before an appointment:

Leg day and refuel

This was delicious chocolate pudding made with 1/2 C Greek yogurt, 1/2 scoop chocolate protein powder, almond milk, and cinnamon.

The topping was a crumbled Sweet Potato Baked Oatmeal, straight from my freezer.  I’m so obsessed with these.

Meal 3:

Lunch was an old favorite: Salmon Pizza with Sweet Potato “Sauce.”  I used tortilla crust and topped it with spinach, artichokes, and onions.

Sweet Potato Salmon Pizza

Meal 4:

I developed an addiction to Whole Foods’ Naked (read: no salt) roasted chicken.  Not a cheap habit, but worth my sanity as I hate touching raw chicken.  Every Sunday I buy one and pull off all the white meat to eat throughout the week.  Today I ate it chicken salad-style, but with a hummus mix rather than mayo.

Hummus Chicken Salad

Hummus Chicken Salad

  • Shredded chicken
  • Broccoli slaw
  • Red peppers, chopped
  • Hummus
  • Apple Cider Vinegar
  • Cumin and red pepper flakes, to taste

I didn’t measure, but the hummus and ACV is about a 1:1 ratio.

Meal 5:

I could hardly wait for dinner.  I’ve been eyeing Kristina’s Cholar Dal recipe for a couple of weeks and this frigid day seemed the be the perfect time to try it out.

It was AMAZING!  I licked my plate clean.  I ate it alongside some pan-seared tempeh and roasted brussels, broccoli, and mushrooms.

Cholar Dal, tempeh, and roasted veggies

There is something in my head that will not allow me to simply follow a recipe.  Here are my modifications:

  • Added 1/2 red pepper
  • Used 1/4 C tomato paste rather than fresh tomatoes
  • Added 1/4 tsp fenugreek and 1/2 tsp coriander
  • Increased cayenne to 3/4 tsp
  • Didn’t use the salt, butter, and dried chilis

Meal 6:

Please don’t get bored with me.  I love carrots.  And peanut butter.  And eggs.  PB & Ceggs.  Again.

PB & Ceggs

Meal 7:

Casein is good to have at night for muscle recovery.  unfortunately, I can’t stand the texture.  No matter – I really like having dairy before bed.  Maybe a carry over from a youth filled with nighttime ice cream bowls?

This creation is going to be in heavy rotation.  I’m scraping the bottom of the bowl and trying to convince myself that I don’t need another as I type this.  It’s like blueberry cheesecake with hot brownie on top.

Clean Blueberry Cheesecake

Need I say more?

Blueberry Cheesecake Fluff

Blueberry Cheesecake Fluff

  • 1/2 C cottage cheese
  • 1/4 C blueberries
  • 1/4 tsp butter extract
  • 1/4 tsp coconut extract
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • Pinch of cardamom
  • 6-7 drops liquid stevia
  • Water or milk
  • 1 rice cake

Place everything except the rice cake in a blender with enough liquid to blend.  Blend until mostly smooth.

Pour over a rice cake.  Tops as desired – I warmed a Cookies ‘n Cream Think Thin bar in the microwave and crumbled it on top with more fresh berries and cinnamon.

Note: if you don’t have butter and coconut extracts, simply sub vanilla and/or almond extract.

The protein count for the day: 183.2g.  Nailed that one!

Don’t forget to join the Strange But Good link up this Friday!!! :)

I’ve been too obsessed with broccoli slaw this week. Ah, how I wish I could have cottage cheese, boo to those silly intolerances. I definitely crave wine or a drink every now and again. I maybe give in once a week, I try to stretch it to every 2 weeks, but sometimes events come up and that just doesn’t happen;) You totally deserved that treat meal considering your insane race!

    1. Laura

I defintiely think there’s a place for wine – I just like to take a “detox” month every so often. Feburary will see the return of a glass or two of red per week… you know, for my heart. ;)

  2. Khushboo

I’m with you about my nightly bowls of dairy- it’s al I seem to crave before bed…and so long as it’s yogurt/cottage cheese and not always ice cream, there’s no harm in giving in :)!

  3. Alex Bridgeforth (@alexbridgeforth)

7 Meals!!!!! And btw do you like your MT10s?

    1. Laura

LOVE them! I shaved significant time off my mile when I got them. I’m not running fast these days, but I still really like the stride they give me.

  4. Kristina

I am SO happy you made it!! AMAZING, isn’t it?? the flavors are just incredible.

    1. Laura

Oh yes – SO good. I’m going to be sad when it’s gone. Thank you for a GREAT recipe!

  5. STUFT Mama

Cleggs????? You are too funny. I need to try those ASAP (and that darn TVP). :)

    1. Laura

Friend, you would love them. My #1 favorite conbo is to make them with apple. Like PB apple pie!

  6. Sue

I’m mostly craving chocolate and cookies. Or chocolate cookies. I try to distract my tastebuds with healthier versions, like the banana oatmeal cookies from blogilates.com. Adding a dash of cocoa makes them even better.
Lately I’m been enjoying a late night bowl of muesli with almond milk and cocoa quite often. That totally satisfies my dessert cravings.

    1. Laura

“distract my tastebuds” <— love it!

  7. Jessie

I almost always crave chocolate & cookies.. and well since I’m trying to put on weight, you better believe I indulge in some every day :)

    1. Laura

      Good for you! :)

  8. Angela @ Happy Fit Mama

I like that you are listening to what your body wants – it knows best! I’ve been loving warmed berries over a mini protein chocolate cakey thing I make. Hits the spot!

  9. Katie @ Talk Less, Say More

So much blueberry love this morning! :)

  10. Andrea

Genius using hummus in chicken salad!!!!! I am going to try that for sure!!

  11. Miz

I caint stand mayo for some reason (ew :)) Im hummus instead ALL THE WAY.

    1. Laura

I’m the same! Used to love it but now it makes me gag.

  12. Meg

My most recent accomplishment is my weight gain, but I also did set a PR for my bench press yesterday. I, too, did chest and triceps with my trainer :) Although, it was yesterday. Totally straggling with my bench press, though. After hearing you benched more than your body weight, I thought of you as I benched. I am not close to benching my body weight yet, but I’m working at it. I’m definitely feeling my chest today, though!!!!!

It’s funny we both had pizza yesterday!! :) YAY – obviously twins <3

    1. Laura

You did?! Congratulations!!! You are killing it at the gym. Are you guys going to take progress measurments?

  13. Heather @ Kiss My Broccoli

Omg, seriously, I have been eating like CRAP lately…it all started when the man-friend and I attacked a jug (yes a JUG!) of whole wheat cinnamon pretzels dipped in sweet potato butter during our last movie night…we polished off nearly HALF of a 27oz container! Then the next day, I went at it again by myself AFTER devouring a bowl of cereal the size of my head (I’m SO not kidding right now). Yeah, the pretzels have now been hidden in the dark depths of my pantry and the sweet potato butter got chucked…I know, I know, but it had to be done! It was only leading me down the dark refined-carb-laden path to fatigue and over all fat-feeling! ;)

Love the hummus chicken salad! I do that all the time with chicken and tuna! But really, I have no idea how you can stomach those Think Thin bars…the crunch ones are ok but the others…blech!

    1. Laura

I’m convinced they put crack in pretzels. And in Cheetos.

The Cookies ‘n Cream flavor is the ONLY one I like. I used to like the Chocoalte Toffee but they changed the recipe and it’s nasty now.

  14. lindsay

ha, i think being sick changes your taste buds. I was sick for just a day and all i wanted was broth, more broth, toast, and butter. not bad but not good.
Love the chicken salad. I do that at night for dinner and add chicken sausage and smoked BBQ sauce

  15. Danielle

You are a recipe genius! I love blueberry anything and this looks like the perfect evening snack!

  16. Michelle @ Eat Move Balance

Whole Foods sells a NAKED roasted chicken?? The reason I never buy roasted chicken from the store is because it’s usually loaded with salt. Very interesting!!

    1. Laura

I know! I was so excited when I saw it. Call ahead though – sometimes they are out.

  17. Heather (Where's the Beach)

I kind of love supersts and sounds like you took it to the max. Nice job!!! Are you lifting for me too ;-) And that salad? Very similar to what I brought today only mine has tofu instead of the chicken. I didn’t even thinking of the ACV, but it is covered in nooch.

    1. Laura

Ohhh… how did I not think to add nooch?!

  18. Lee

Preacher curling half your body weight?! That’s awesome. And the cheesecake fluff sounds delicious too. I actually have some cottage cheese in the fridge that’s just sitting there waiting to be made into this.

    1. Laura

Totally worth the extra effort to use the blender. ;)

  19. Tiff @ Love Sweat and Beers

Great job on the bench press. My goal used to be to bench my weight, but I never quite got there. Perhaps I’ll revisit that goal. :)

Meal 4 looks great. Broccoli slaw is sooooooo easy and sooooooo good.

  20. Sarena (The Non-Dairy Queen)

Is it weird that I don’t crave crap? I think I’ve figured out the tricks so I don’t go for the bad stuff, but the truth is, I’ve always been that way. Oh, except cookie dough ice cream. I almost forgot about that. My sister and I used to get the pillsbury cookie dough, chink it up and put it in frozen yogurt…ah, the memories. I know, gross, but what can I say, the bigger the chunks of cookie dough, the better!

Congrats on the lifting, sorry you can’t move your arms. I’m happy to say I’ve seen a little change in the definition in my legs recently. Those are the hardest muscles for me to really get defined even with all the leg work I do. I love where I’m at with my arms, but my legs are tough. Yours look amazing! I love watching you change!

    I’m glad you’re feeling better!

    1. Laura

We used to do the same with cookie dough at sleepovers. With Ben & Jerry’s. My sweet tooth apparenlty knows no limits. LOL!

Your arms look amazing! That’s my fav part to work too. I have to go to my trainer for leg day.

  21. janet @ the taste space

Wicked weights (and eats), Laura! I mistakenly did a new squat weight this morning. I added an extra 5kg in my morning fogginess and it took me a while to figure out why it was so hard. But now I know I can squat that much! :-)

    1. Laura

Haha – don’t you love when that happens? Congrats on the PR!

  22. Kierston

So sorry that your sick! I fell sick, again, while here in QC. I feel like craaaapppola!

    Legs look awesome!

I crave carbs the most when I’m sick…that and chocolate :)

Most recent accomplishment: my fitness competitions this past October/November!

    Get better soon!

    1. Laura

I was sick last week -all better now. Thank you. :)

      You ROCKED those competitions!

  23. Laura @ Mommy Run Fast

I don’t think you have to worry about us ever becoming bored with your eats. :) And I know that post-endurance event hunger too well! It does finally slow down.

    1. Laura

I have been thinking of you as I eat my way through each day! I remembered you posting that after your marathon. :)

  24. Alex @ therunwithin

yay just come cook for me… ok? I am glad you are listening to what your body wants, those races leave you hungry as ever i bet!

  25. Calee

Again you are a fridge psychic. I’ve got cottage cheese that I have no idea what to do with sitting in my fridge right now.

AND I have a giant thing of carrot pulp in the freezer! :)

    Mmm.. trashy calories.

  26. Amanda @ .running with spoons.

I’m definitely with you on hating on raw chicken. I tried the roasted chicken at Whole Foods when I was down in Vegas last month, and yeaaaaah… that’s probably one of the biggest reasons that I wish we had a WF up here – the only ready made chicken I can find is loaded with chemicals. Blah. BUT! I occasionally manage to persuade my mom to cook me up some chicken… so I just go mooch off of her ;)

    1. Laura

Lucky!!! Maybe I should try to roast one… but the rotissire is soooo good.

  27. Lot-O-Choc

oh yum – you definitely deserved that waffle after your race! bet it tasted like heaven!
as you may have guessed by my blog my treat is always chocolate! haha – i normally have a bit every week but since christmas i havent touched any so im proud of myself!
my latest fitness achievement is a new deadlift PB woooo!
loving the look of your blueberry fluff..will be trying that soon! yummmayyyy! :D

    1. Laura

      You like chocolate? Really? ;)

Congrats on the PR!!! That may deserve a small piece of chocolate…

  28. Carol @ Lucky Zucca

Congrats on your awesome gym days!! I’m super jealous! I’ve really been missing the gym lately. Love the name for the blueberry cheesecake fluff! As always, your eats look fantastic. PS I used butter extract yesterday. YAY be like Laura in effect! lol

    1. Laura

What did you put it in?! Did you love it?

      1. Carol @ Lucky Zucca

My Apple Pie Baked Oatmeal!! I couldn’t taste it… I think it needs a little more. Tweaking!

        1. Laura

Ohhh… I am so excited for this recipe!

  29. Biz

My sister is the same with raw meat – or really any meat on the bone – she can barely touch it! Of course, then I like to email videos of myself breaking down a whole chicken just to gross her out :D

    1. Laura

You must be the little sis… ;)

      1. Biz

Ha – nope, she’s my TWIN sister! :D She likes ketchup, I like mustard, she loves onions, I hate them – go figure!

  30. Gina @ Health, Love, and Chocolate

The blueberry cheesecake fluff looks delicious, I wish my stomach could handle cottage cheese. I might have to give this try with greek yogurt, pretty much the only cow’s dairy my body likes.

    1. Laura

I think it would be great with greek! Let me know if you try it!

  31. Sarah @ The Smart Kitchen

Gosh darnit! I wish my past two days of experimenting with “Can my stomach tolerate cottage cheese?” had not been so, well, unsuccessful. [Not horrific, but not the most pleasant.] Good thing I also have something in my brain that won’t let me follow a recipe. I bet I can re-imagine this. [If I ever stop being lazy and just eating the same thing on repeat.]

    1. Laura

It would totally work with greek… or maybe tofu?!

  32. Haley @ fullnfit

OH MY! You just made my day… Definitely making this tonight!!! I have everything except the coconut extract.. I’ll sub vanilla! Thanks =)

    1. Laura

Awesome! Let me know what you thought. :)

  33. Heather @ Better With Veggies

Okay – I admit, I was so in awe that I didn’t retain anything I read after: “I benched pressed about 8 lbs more than my body weight and then preacher curled a little more than half my body weight.” You are so awesome!! Please don’t beat me up. ;)

    1. Laura

LOL! I think if I tried you could just out-run me. ;)

  34. Cassie @ RedLetterDaye

Holly crap, you are a machine! My chest is so weak! I can’t even bench half my body weight. :/ But I did manage to accidentally add 25 lbs to my deadlift this weekend at the gym, and PRed my bicep curls, which is a huge one for me. Still nowhere near half my bodyweight though. Hello, beastmode! Congrats!

    1. Laura

Way to go! Biceps are a hard one to jump up on. I wish more gyms had weights in 2.5 lb increments.

  35. Jody - Fit at 55

That first part cracked me up about not lifting a glass of water!!! Still feeling my Monday DOMS! Switched up tris for tomorrow & did back today cause the tris are still feeling it! :)

Always love the eats & going to check out the WF chicken even though I am pissed at the CEO for his comments on Obamacare! ;)

    1. Laura

      I know, I know… but I just love WF so much…

  36. Olivia @ Liv Lives Life

What an amazing idea for a pizza! It’s so different but sounds delicious!

    1. Laura

Thanks! It’s one of my favorites. :)

  37. Amelia

I am going to have to start posting all of my ‘strange but good’ meals to twitter since I’m not blogging anymore. My eats have been VERY strange lately to the point that my husband starts to give me funny looks when we sit down to dinner. (The other night it was shaved brussels/ leek sauteed on top of a bed of shredded steamed kale, then it was all topped with crab and a tiny sprinkle of parmesan.) But ya know what? As long as he likes what is on his plate and I like all of the components of mine then everything is good. There is no way I could thrive off of his food choices!

The sweet potato pizza looks delish! I need to try that one soon. As far as the blueberry cheesecake fluff, I SO wish I could eat dairy without getting ridiculously bloated. Recipe looks divine. Small amounts like hard parmesan are ok on my stomach, but throw any other dairy my way and I look like I’m carrying twins. Not cool!

    1. Laura

If you email me pics, I’ll post them Friday! :)

You could try the fluff with tofu maybe?! Cheese doesn’t actually have an lactose, so that’s not suprising. Thank god – parm is delish! :)

  38. Hannah

Babe I love your food. If it weren’t for the fact that you have a job and life already and I’m now an unpaid intern, I would try to convince you to be my personal chef. :P

    Your legs look killer!

    1. Laura

Hannah… that really made my day. Thank you!!!!

  39. Kristabel@RaceReady

Awesome job with the protein. I’ve been thinking about upping mine…I was at just 11% of my calories from protein today.

    1. Laura

Whoa… that’s pretty low. If you aren’t lifting you definitely don’t need as much as I do, but a good rule of thumb for those that exercise regularly is .75g per pound of body weight.

      1. Kristabel@RaceReady

        Thanks for the info!

  40. Eating 4 Balance

That blueberry cheesecake fluff sounds awesome. I’ve heard that mixing it with just plain water, then letting it sit in the fridge helps it “grow” and turn into a fudge. Have you tried that? Or is that the texture issue?

I’m allergic to milk though, so I have no idea what I’m talking about obviously! Haha.

    1. Laura

I’ve never tried that… makes sense though! If you can’t do milk, I think this would work with tofu. I use tofu in shakes all the time for creaminess.

  41. GiGi Eats Celebrities

OKAY #1 – YOUR LEGS, ROCK SOLID!!! They remind me of Greek God legs!! Super sexy, LOVE! ha ha ha ah!!

#2 – Hey, you know, it may not have a totally Junk Free January, but one step at a time and this month is was alcohol! Honestly, getting rid of alcohol first and for most is WONDERFUL!! WONDERFUL I tell you… Oh and what else is wonderful, that salmon pizza! I wanna make that with a cauliflower crust or something!!! Oh my, that will be quite the sight in the kitchen, me trying to cook a pizza. That’s like watching a dog try to bar tend. LMFAO!

    1. Laura

Hahaha! Thank you!!! I wish I had Greek God legs. Or a Greek God. ;)

Have you checked out my cauliflower crust? I make it once a week. Freezes well too!

  42. Nadiya

Broiled grapefruit 0.0 I need to try that out!

Pssh! You deserved that waffle after that crazy adventure race you did! Using hummus instead of mayo- great idea!

  43. Karey @ Nutty About Health

Mmm… I think you always have the most interesting eats. They usually make me pretty hungry. Just thought I’d let you know. ;)

    1. Laura

      That’s a huge compliment – thank you!!

  44. MCM Mama

I’ve been on a real oatmeal kick lately. At night, I make a small pot of old fashioned oatmeal with whatever I can think to throw in. I eat half as my bedtime snack and then have the other half for breakfast. Yum. But that cheesecake fluff sounds like something that needs to go in the rotation…

    1. Laura

That is a brilliant idea I may have to do that tonight… thanks!

  45. Parita @ myinnershakti

I’m definitely buying some cottage cheese this week and trying this out! YUM!

    1. Laura

Let me know! Hope you had a great b-day!

  46. Heather @ girlyeverafter

The chicken and hummus salad looks so good! I actually thought about doing that but was a little scared but now I’m going to try it!

    1. Laura

Go for it! I bet it would be good in tuna salad too…

  47. Meghan@CleanEatsFastFeets

How dare you call yolk poor trashy. If that’s the case, then I must be a total….wait, oh.

I love the look of your tortilla pizza, and now I want artichoke hearts for breakfast tomorrow. Strange, but good….

    1. Laura

      Hahaha – I embrace trashy. ;)

  48. Allie

Your legs are looking SO GOOD! And I can’t do the casein thing either, I’m gagging down the rest of the awful optimum nutrition stuff just because I hate waste, but then it’s going to be straight Greek yogurt combos–I can’t wait.

  49. Alex @ Cookie Dough Katzen

Yum! It’s totally good to give in to your body’s urge to eat trashy caloric food! My favs are anything in the dessert category. Cookies, cupcakes, chocolate, the list goes on :)

    1. Laura

I’m the same way. Baked goods are where it’s at!

  50. Jed Gray (sportsglutton)

Ok your legs are finally better than mine…then again I don’t shave mine. ;-)

    1. Laura

      You don’t shave?! Unclean!

P.S. I hear there’s a game on today? Shouldn’t you be 100% focused on your coaching form the couch job? ;)
