Banana S’mores Protein Pancakes

Cover me in syrup.

‘Cause I’m going to roll in Heather’s pancakes.

You know when you meet someone and feel like you’ve known them forever?  That’s how I feel about Heather.  Maybe that means I’m too comfortable…

When she came to visit recently, I decided to take advantage of the situation and ask for a favor – a guest blog while I’m skiing with other Heather.  Yes, I shamelessly made my guest cook, and then asked for a guest post during a holiday week.  Worst hostess ever.

Lucky for all of us she wasn’t offended and agreed to write this post.  Banana S’mores Protein Pancakes.  Holy mother of deliciousness.  Thank you, my friend.

Hey hey Sprint 2 the Table Fans!

Heather here from Kiss My Broccoli subbing in for Laura today while she’s frolicking in the snowy wonderland of Colorado with Heather.  Not gonna lie, I’m definitely a little jealous…of the chance to hang with my namesake…NOT of the snow!  They can keep that stuff all to themselves!  (Editor’s Note: Snow for skiing is acceptable snow! :) )

When Laura asked me if I would be willing to write a guest post for her, I agreed without hesitation.  I mean, c’mon, I owe her more than a plate of snickerdoodle pancakes for the amazing time she showed Allie and me during our visit to Atlanta last weekend.

Speaking of pancakes…my blog may hint at my love of broccoli, but since I started blogging almost two years ago (wow, where does the time go?), I’ve discovered that I am downright passionate about pancakes.  Almost every Sunday, you’ll find a new recipe on my blog with a variety of flavor combinations and ingredients, sometimes even gluten-free or vegan varieties, but my all-time favorite?

PROTEIN PANCAKES!

I’ve been reading Laura’s blog for a while now, and one of the things I love most about her recipes (besides her amazing creativity and use of spices) is the high protein content in all of them.  Even if you’re not training for a figure competition, it’s still important to be sure you’re getting enough protein in your diet.  Besides building and repairing muscle tissue post workout, including more protein in your meals can help you feel more satisfied throughout the day… thus curbing those “snacky” cravings we sometimes get.

Cottage cheese, peanut flour, edamame, chicken, and fish are some of my favorite sources of protein.  While natural sources are the best to look to, I love mixing it up a bit with protein powders as well.

But no need to get boring… I can NEVER understand those people who just throw some powder in a glass of water and call it done… especially when you can whip up a batch of these babies in all of about 20 minutes.

Graham crackers, chocolate, bananas…what’s not to love?

Banana S’mores Protein Pancakes

  • 1/8 cup maple syrup
  • 1 tablespoon unsweetened cocoa powder
  • 1 modified flax egg (1/2 tablespoon ground flax + 1 1/2 tablespoons warm water)
  • 1/3 cup whole wheat pastry flour
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened vanilla almond milk
  • 1 tablespoon semi-sweet chocolate chips
  • 1 graham cracker sheet, crushed and more chocolate chips for garnish (optional)

  1. To make chocolate syrup, combine syrup and cocoa powder, whisk until smooth.
  2. Heat a non-stick skillet over medium heat and coat with cooking spray.
  3. Prepare flax egg and allow to set.
  4. Combine flour, protein powder, baking powder, and cinnamon in a medium-sized bowl.
  5. In a separate bowl, combine flax egg, vanilla, and milk.
  6. Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
  7. Fold in chocolate chips.
  8. Spoon batter onto greased skillet (makes 3 small-medium pancakes) and allow to cook for approximately 4-5 minutes per side.
  9. Transfer to a plate, layer with banana slices, and top with chocolate syrup.

The perfect post-workout breakfast… or heck, ANY breakfast… I mean, it IS chocolate, right? ;)

And if you don’t want to add the protein powder, they’re just as tasty… just be sure to cut the liquid down to compensate!  (Editor’s Note: What if I don’t have liquid?  Kidding!!!)

But whatever you do, don’t skimp on the chocolate!  Thanks to everyone for reading! I hope you’ll stop by my blog at Kiss My Broccoli and say hello…Sunday’s may be for pancakes, but I DO make other tasty things as well! ;)
And thank you so much Laura for having me!

***

I think I need to make these for breakfast while we’re in Vail!  Like right now.  Ski fuel!

Do you use protein powder? What is your favorite brand?

What is your favorite natural source of protein?

Hope you’re having fun in Colorado! I think you could use these as a means for bartering for maple bacon donuts…just saying! And don’t worry, if you don’t have any liquid, you can just use spit! But you may want to be sure to keep that as your “secret ingredient” ;)

    Love ya!

    1. Laura

Hahaha – I’m getting doughnuts on Thanksgiving. Not maple bacon though – cranberry!

Dude. That’s a lot of spit.

Thank you again for writing this awesome guest porn… errr… post… for me! xoxo

    2. Heather @ Kiss My Broccoli

I have to agree with Laura, the vanilla chai is amazing!

Agreed! Love the Vanilla Chai for an almost daily snack.

  6. Sue

Those pancakes look and sound amazing! They’re already on my Sunday breakfasts list.
I hardly ever use protein powder. I’m still working my way through that huge Sunwarrior Vanilla bag. My fav natural protein sources are tofu and edamame. Yum!

    1. Laura

I love my Sun Warrior! It a good fairly neutral base for my funky smoothies. :)

  7. Angela @ Happy Fit Mama

Oh my! Consider this recipe pinned and WILL be made asap. Heather has out of this world recipes! Thanks for sharing!

  9. Katie @ Talk Less, Say More

It’s just not fair. I just ate my breakfast. Can I have a second breakfast with pancakes? ;)

    1. Laura

I think every day should involve 2 breakfasts!

    2. Heather @ Kiss My Broccoli

Oh course! And you know what tastes even better than pancakes for breakfast? Pancakes for DINNER! ;)

  10. Alexandra

I literally just entered a foodgasm incuded coma. HOLY CRAP!!! Those look fantastic! :D
Hope you’re having a wonderful time in CO!!

    1. Laura

LOL! I should have titled this post “not safe for work.”

    2. Heather @ Kiss My Broccoli

Haha! Thanks girlie! And um….sorry? ;)

  11. Nadiya

I pretty much never use protein powder and my parents will kill me if they see me using it :( I do have some protein bars hidden in my desk though which I use on special occasions :P Sometimes I don’t see the point of taking whey/ casein protein because you can just have some cottage cheese or greek yogurt. It’s got like 15g of protein per serving. I kind of view protein powders more as a supplement which I might take if I’m doing a 10 mile+ run. However, I guess it’s a necessity to reach such high protein intakes if you’re doing strength training. Can’t imagine eating 10 servings of cottage cheese lol!

    1. Laura

      They are against protein powder?!

      1. Nadiya

Yup… they’re also against me drinking kale smoothies and my mom cringes whenever I have hummus or any legumes. It’s always the same argument with my mom being like just eat whatever our family always has- potatoes& pork–> puke. My grandmother is trying to convince me to eat salted lard, according to her it’s super healthy. However, me having like 5 servings of veggies a day is considered a vegetable overdose by her. Let’s just say I thought I wouldn’t have to worry about cooking when I moved back home but NOPE!

        1. Heather @ Kiss My Broccoli

Oh my gosh! Sounds like your family has a warped perspective of healthy eating. I get a lot of the same comments on my eats when I’m at work…people are quick to point and stick they’re noses up at my big bowl of brussel sprouts, but really? Let’s talk about that cheeseburger and french fries…um, you’re 4th this week? You don’t see me making any comments! I eat what makes me happy…boo on others for trying to bring me down!

And as far as the protein powders go, I typically only use them here and there…I LOVE cottage cheese, but really…you can only eat so much before it starts to get old! Lol

  12. Danielle

I want these now! They look so amazing. Heather you are a pancake recipe genius! Every time I think you’ve come up with my favorite new pancake recipe you come up with yet another even more amazing one :)

    1. Laura

That’s exactly how I feel! It’s like I have a new favorite every week.

    2. Heather @ Kiss My Broccoli

Aww, you are too sweet! Thanks girlie! xoxo

  13. Sarena (The Non-Dairy Queen)

My favorite natural protein is definitely eggs! Right now, I’m loving Plant Fusion vanilla protein powder. I put it in and on everything when I want a little added sweetness and protein boost. I can’t seem to get enough of my protein cakes. They’re so easy and filling. These pancakes look amazing! Perfect flavor combination too!

    1. Laura

I still need to try Plant Fusion! I’m seeing it everywhere lately.

    2. Heather @ Kiss My Broccoli

I need to the Plant Fusion! I’ve heard so many good things about it! And Sarena, m’dear, you are the protein cake QUEEN!! Love em!

  14. amelia

Nom nom nom yummy!!!! Are you sure these are protein pancakes? They seem way too indulgent ;)

    1. Laura

I thought the same thing when Heather sent me the pics!

    2. Heather @ Kiss My Broccoli

Haha! I love hearing that! And seriously, how awesome is it to have dessert for breakfast? ;)

  15. Kierston

Holy moly! I’m wipping the drool from my mouth. Oh my goodness.

  16. Kierston

Oh and to answer your questions….Yes, I do use Protein Powder. I love me Revolution High Whey :)

    1. Laura

I’ve never tried any Revolution products… add it to the list! :)

  17. Alex @ therunwithin

Hope you are having a blast skiing! Those look delicious.

  18. Kammie @ Sensual Appeal

    You both are awesome <3

    1. Laura

Awwww… thank you! I wish I could hire Heather to make me pancakes every morning.

      1. Heather @ Kiss My Broccoli

Pay me enough and I’ll quit my job and move to ATL…I got dibs on the left side of the bed though! ;)

    2. Heather @ Kiss My Broccoli

Aww, thanks doll! Who knows, maybe one day I’ll show up on your doorstep with my spatula in hand! I HAVE been wanting to see Chicago for a while now! ;)

  19. Karey @ Nutty About Health

O.M.G. These pancakes look AMAZING!! I’m such a pancake & french toast lover… really need to make these sometime. Thanks for sharing! :)

    1. Laura

I made french toast Sunday morning! I don’t know if I could choose between the two…

    2. Heather @ Kiss My Broccoli

You’re very welcome, Karey! I’m a French toast lover myself, but my heart will ALWAYS belong to my beloved pancakes! :D

  20. Allie

I somehow went an entire weekend without any pancakes. Withdrawal. Drooling over here. And thinking it’s about time for a pancake dinner. Or at least a chocolate syrup dinner. What’s the protein content in that? ;)

    Love you ladies!

    1. Laura

Cocoa powder has 1g of protein per tablespoon. ;)

    2. Heather @ Kiss My Broccoli

Gosh, I’m already ready to go back to ATL! Seriously, one of the best weekends of my life! So glad to have been able to spend it with you ladies! Just let me know when you’re down for round two…and of course I’ll be taking pancakes requests! ;)

  21. Heather @ Better With Veggies

These look amazing Heather!! And vegan – which makes it even better! :) I’m pinning these now!

    1. Heather @ Kiss My Broccoli

Thanks Heather! I hope you like them!!

  22. Elle

    These look great!

  23. Sarah @ The Smart Kitchen

Another stack of pancake perfection. :)

  24. lindsay

knowing heather, she probably loved doing both for YOU! And who wouln’t. Great post friends. OKay, now you both come to Austin and cook for me.
    ;-)

    1. Laura

be careful what you ask for… I go to Dallas a lot for work. :)

    2. Heather @ Kiss My Broccoli

I DID! That’s the one thing I just don’t get to do enough of…cook for people! Makes me so happy…especially when I see that look on their faces after the first bite! :D

  25. Debbie (Accidently Delish)

i heart both you ladies so much. when is it my turn for heather to come and make me pancakes! i demand it be soon!!

    1. Laura

You guys should BOTH come to ATL!

  26. Laura

Oh my deliciousness. That picture is amazing. Gotta try these! I am still in experimental phases with protein powder, as I also prefer natural food sources (beans, nuts, quinoa, etc)… but want to try Sun Warrior next.

    1. Laura

Natural is certainly best, but I do thing that protein powders are good options for a quick post-workout recovery or and end of the day repair snack. Definitely have to be careful with them – many have some nasty additives. I do love my sun Warrior… but not if you mix it solely with water., IMHO.

    2. Heather @ Kiss My Broccoli

If you’re still new to the protein powder thing, protein pancakes/microwave cake “bakes” are some of the best ways to experiment outside of throwing together random things for a smoothie. :)

  27. Jody - Fit at 55

OMG – YUM!!!!!!!!!!!!!!!!! I need you & Laura to bake & cook for me! I am lazy! ;)

  28. Kristina

my favorite natural proteins are spinach and cashews… this is a beautiful stack of cakes, as Heather’s always are!! and yes, perfect ski fuel, wish I was there!!

    1. Laura

Mmmm… cashews. I love them covered in sea salt and chocolate. ;)

  29. Sam @ Better With Sprinkles

These look so good! Banana and s’mores…too of my favourite flavours in one delicious-looking pancake!

    1. Laura

I love that you write “favourite” with a u.

      1. Sam @ Better With Sprinkles

What can i say, I am Canadian. :-p

  30. Carol @ Lucky Zucca

I’m seriously drooling. These look absolutely amazing. Come to my houseeee I have a new puppy you can play with in exchange for pancakes ;)

    1. Laura

      LOL! Done deal. :)

    2. Heather @ Kiss My Broccoli

PUPPY?! My bag’s packed! Where am I heading!? ;)

  31. Allie

Oh dang, these look SO good! I bet they taste even better :)

    1. Heather @ Kiss My Broccoli

More than you can even imagine…that last bite…so bittersweet! ;)

  32. Ashley @ Freckles & Spice

I love you two so much! Can’t wait to see you girls again, and hopefully stay in the same house again too. I literally get giddy thinking about it.

Heather – your pancakes are ridiculous. You need to open an HIHOP – Heather’s Inspirational House of Pancakes. It would be the happiest place on earth, next to disney.

I do love pro powder. Sunwarrior is my usual, expensive taste. But I’m gonna have to find a cheaper protein love.

My favorite natural proteins are eggs, fresh tofu, and beans!! I’m a bean fiend lately. I really love island spiced red beans with eggs over it. Oh and nuts of course – that is a given. I’ve perfected a cashew pudding / mousse recipe over the last few months, and I can’t go a few days with out it.

    1. Laura

I would eat at HIHOP in a hot minute. :)

    2. Heather @ Kiss My Broccoli

Love it! And if I knew there wouldn’t be any retaliations for brand encroachment, I’d totally steal that name should my dreams of opening a restaurant ever come true! Hmm, what do you think of Kiss My Spatula? ;)

Island spiced beans with eggs? Sounds dreamy! As does the cashew mousse! :D

Love you too! I seriously CAN’T wait for Blend next year!

  33. Eating 4 Balance

    These pancakes look delicious!

I’m hoping to make some protein waffles if I’m able to buy a waffle maker on Black Friday! It will definitely involve bananas :)

    1. Laura

I’ve been trying to talk myself out of a waffle maker for years. LOL!

    2. Heather @ Kiss My Broccoli

Thanks, Madison! Ugh, I’ve been trying for MONTHS to make a perfect protein waffle and haven’t had any success…hopefully you’ll have better luck! Just remember to SPRAY YOUR IRON! Because picking a waffle out of all those tiny crevices is not the best way to start a morning…just saying! ;)

  34. Hannah

Hooooooly smokes this looks delicious. And zomg! I”m finally living somewhere where graham crackers exist! I can finally taste them!

    1. Laura

Graham crackers and peanut butter is one of the best combos ever. Total comfort food snack.

I love my Sunwarrior protein and eggs for my natural protein!

    1. Laura

That would be SO much fun. We need someone to let us take over a kitchen at Blend!

      1. Heather @ Kiss My Broccoli

        Omg, YES!!!

    2. Heather @ Kiss My Broccoli

Aww, love you too gorgeous! We definitely need to see about a pancake bar at Blend next year! :D

  39. Ali @ WHOLEistically Fit
