You know when you meet someone and feel like you’ve known them forever? That’s how I feel about Heather. Maybe that means I’m too comfortable…
When she came to visit recently, I decided to take advantage of the situation and ask for a favor – a guest blog while I’m skiing with other Heather. Yes, I shamelessly made my guest cook, and then asked for a guest post during a holiday week. Worst hostess ever.
Lucky for all of us she wasn’t offended and agreed to write this post. Banana S’mores Protein Pancakes. Holy mother of deliciousness. Thank you, my friend.

Hey hey Sprint 2 the Table Fans!
Heather here from Kiss My Broccoli subbing in for Laura today while she’s frolicking in the snowy wonderland of Colorado with Heather. Not gonna lie, I’m definitely a little jealous…of the chance to hang with my namesake…NOT of the snow! They can keep that stuff all to themselves! (Editor’s Note: Snow for skiing is acceptable snow!

When Laura asked me if I would be willing to write a guest post for her, I agreed without hesitation. I mean, c’mon, I owe her more than a plate of snickerdoodle pancakes for the amazing time she showed Allie and me during our visit to Atlanta last weekend.
Speaking of pancakes…my blog may hint at my love of broccoli, but since I started blogging almost two years ago (wow, where does the time go?), I’ve discovered that I am downright passionate about pancakes. Almost every Sunday, you’ll find a new recipe on my blog with a variety of flavor combinations and ingredients, sometimes even gluten-free or vegan varieties, but my all-time favorite?
PROTEIN PANCAKES!
I’ve been reading Laura’s blog for a while now, and one of the things I love most about her recipes (besides her amazing creativity and use of spices) is the high protein content in all of them. Even if you’re not training for a figure competition, it’s still important to be sure you’re getting enough protein in your diet. Besides building and repairing muscle tissue post workout, including more protein in your meals can help you feel more satisfied throughout the day… thus curbing those “snacky” cravings we sometimes get.
Cottage cheese, peanut flour, edamame, chicken, and fish are some of my favorite sources of protein. While natural sources are the best to look to, I love mixing it up a bit with protein powders as well.
But no need to get boring… I can NEVER understand those people who just throw some powder in a glass of water and call it done… especially when you can whip up a batch of these babies in all of about 20 minutes.

Banana S’mores Protein Pancakes
- 1/8 cup maple syrup
- 1 tablespoon unsweetened cocoa powder
- 1 modified flax egg (1/2 tablespoon ground flax + 1 1/2 tablespoons warm water)
- 1/3 cup whole wheat pastry flour
- 1 scoop vanilla protein powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened vanilla almond milk
- 1 tablespoon semi-sweet chocolate chips
- 1 graham cracker sheet, crushed and more chocolate chips for garnish (optional)
- To make chocolate syrup, combine syrup and cocoa powder, whisk until smooth.
- Heat a non-stick skillet over medium heat and coat with cooking spray.
- Prepare flax egg and allow to set.
- Combine flour, protein powder, baking powder, and cinnamon in a medium-sized bowl.
- In a separate bowl, combine flax egg, vanilla, and milk.
- Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
- Fold in chocolate chips.
- Spoon batter onto greased skillet (makes 3 small-medium pancakes) and allow to cook for approximately 4-5 minutes per side.
- Transfer to a plate, layer with banana slices, and top with chocolate syrup.
The perfect post-workout breakfast… or heck, ANY breakfast… I mean, it IS chocolate, right?
And if you don’t want to add the protein powder, they’re just as tasty… just be sure to cut the liquid down to compensate! (Editor’s Note: What if I don’t have liquid? Kidding!!!)

Hope you’re having fun in Colorado! I think you could use these as a means for bartering for maple bacon donuts…just saying! And don’t worry, if you don’t have any liquid, you can just use spit! But you may want to be sure to keep that as your “secret ingredient”

Those pancakes look and sound amazing! They’re already on my Sunday breakfasts list.
I hardly ever use protein powder. I’m still working my way through that huge Sunwarrior Vanilla bag. My fav natural protein sources are tofu and edamame. Yum!

I pretty much never use protein powder and my parents will kill me if they see me using it
I do have some protein bars hidden in my desk though which I use on special occasions
Sometimes I don’t see the point of taking whey/ casein protein because you can just have some cottage cheese or greek yogurt. It’s got like 15g of protein per serving. I kind of view protein powders more as a supplement which I might take if I’m doing a 10 mile+ run. However, I guess it’s a necessity to reach such high protein intakes if you’re doing strength training. Can’t imagine eating 10 servings of cottage cheese lol!

Yup… they’re also against me drinking kale smoothies and my mom cringes whenever I have hummus or any legumes. It’s always the same argument with my mom being like just eat whatever our family always has- potatoes& pork–> puke. My grandmother is trying to convince me to eat salted lard, according to her it’s super healthy. However, me having like 5 servings of veggies a day is considered a vegetable overdose by her. Let’s just say I thought I wouldn’t have to worry about cooking when I moved back home but NOPE!

Oh my gosh! Sounds like your family has a warped perspective of healthy eating. I get a lot of the same comments on my eats when I’m at work…people are quick to point and stick they’re noses up at my big bowl of brussel sprouts, but really? Let’s talk about that cheeseburger and french fries…um, you’re 4th this week? You don’t see me making any comments! I eat what makes me happy…boo on others for trying to bring me down!
And as far as the protein powders go, I typically only use them here and there…I LOVE cottage cheese, but really…you can only eat so much before it starts to get old! Lol

My favorite natural protein is definitely eggs! Right now, I’m loving Plant Fusion vanilla protein powder. I put it in and on everything when I want a little added sweetness and protein boost. I can’t seem to get enough of my protein cakes. They’re so easy and filling. These pancakes look amazing! Perfect flavor combination too!

Oh my deliciousness. That picture is amazing. Gotta try these! I am still in experimental phases with protein powder, as I also prefer natural food sources (beans, nuts, quinoa, etc)… but want to try Sun Warrior next.

Natural is certainly best, but I do thing that protein powders are good options for a quick post-workout recovery or and end of the day repair snack. Definitely have to be careful with them – many have some nasty additives. I do love my sun Warrior… but not if you mix it solely with water., IMHO.

If you’re still new to the protein powder thing, protein pancakes/microwave cake “bakes” are some of the best ways to experiment outside of throwing together random things for a smoothie.

Heather – your pancakes are ridiculous. You need to open an HIHOP – Heather’s Inspirational House of Pancakes. It would be the happiest place on earth, next to disney.
I do love pro powder. Sunwarrior is my usual, expensive taste. But I’m gonna have to find a cheaper protein love.
My favorite natural proteins are eggs, fresh tofu, and beans!! I’m a bean fiend lately. I really love island spiced red beans with eggs over it. Oh and nuts of course – that is a given. I’ve perfected a cashew pudding / mousse recipe over the last few months, and I can’t go a few days with out it.

Thanks, Madison! Ugh, I’ve been trying for MONTHS to make a perfect protein waffle and haven’t had any success…hopefully you’ll have better luck! Just remember to SPRAY YOUR IRON! Because picking a waffle out of all those tiny crevices is not the best way to start a morning…just saying!
