Two things make me euphoric: good food and hard workouts.
Yesterday I was on the receiving end of both. My spreadsheet delivered today!
Breakfast was mind-blowing. Meal 2 is a new go-to protein source. Lunch – although it was inhaled – was delish. Meal 4 wasn’t exciting, but the GNC Vanilla Whey tastes cake batter-ish when mixed with water. Dinner… well, if it was legal to marry pizza I would. Meal 6 was fun and close to being a new staple. Dessert was a new (to me) recipe from one of my fav bloggers.
On the training front, I had a GREAT workout with my trainer. I squatted 1.5x my body weight. That’s a HUGE jump in just over a month of training.
During a workout it can be overwhelming to push and go all-in. That’s when you know you’re doing it right – when you are out of your comfort zone and breathing hard (provided you are using a good form and common sense). I hit that point during my 4th drop sets of horizontal leg presses.
I looked up at my trainer and said “I don’t know how I’m going to do this.” Then, with his encouragement, I just kept going.
It was HARD, both physically and mentally. I was careful not to say “can’t,” but I won’t say the thought didn’t cross my mind. I shoved it out of my mind, and after the workout was incredibly proud of myself.
Which leads me to the 4th installment of the Fitness-themed What I Ate Wednesday. If you’ve been following, I’m aiming to get ~150g of protein each day as I train for a figure competition (hopefully in NOVEMBER!!!).
In an effort to vary my protein sources, I try not to repeat meals throughout the day (ex: I don’t want to have 7 protein shakes, or 4 servings of scrambled egg whites). Today’s eats included a whopping 5 different sources of protein!

Meal 1:
Like I do every morning, I enjoyed a glass of my Fitmixer Aminos mixed with ~2T of apple cider vinegar and water. I swear it gives me more energy than a cup of coffee… in fact, I no longer make coffee in the morning.

30 mins later I did enjoy a coffee-laced breakfast parfait:

It was a fabulous as it looks. No joke. Recipe tomorrow because I cannot hold this one in much longer.
Meal 2:
A new go-to: Peanut Butter & Jeggs. I do enjoy savory eggs, but sometimes you just want a PB&J. Meal 2 doesn’t get a carb, and PB&J doesn’t pack 20g of protein (the minimum I need at each meal)… so I got creative.

Egg whites, peanut flour, berries… it’s not as weird as it sounds. Really. Recipe at the bottom.
This might be weird: dose anyone else like the little crunchies left over from scrambles? They’re especially good when they are laced with PB.

Meal 3:
Lunch was wolfed down. I was slammed at work and running out the door for a lunchtime appointment with my trainer for the afore mentioned leg day.
This was a tasty combo… but I spent the drive to the gym wondering if eating all this so close to a workout would make me hurl.

On my plate:
- Thai baked tofu
- Spinach
- Sweet potato
- 3 bean mix
Thankfully, I didn’t vom during my workout.
Meal 4:
This is what eating for fuel looks like:

GNC Whey Vanilla Protein I received as part of this Fitfluential protein powder review, mixed with water to form a “pudding.”
Followed by a giant carrot when I got home.

Meal 5:
I’m still swooning over this meal. It’s one of the best I’ve had in recent memory… and that’s saying a lot.
Cauliflower pizza perfection, based very closely on this recipe from Gluten -Free Happy Vegan.

I won’t re-post the recipe, but I did have some modifications:
- I didn’t squeeze the liquid out of my cauliflower
due to laziness - Since I felt my cauliflower was small (and had that excess liquid), I only used 1/4 C egg whites
- Subbed quinoa flakes for oat flour
- Added 1/2 tsp of oregano and 1/2 tsp garlic to the “batter”
Topped with baby bellas, red onion, garlic, red pepper, French sorrel, and purple basil, and drizzled with nooch “sauce” (1 T nutritional yeast + 1 T water) before placing back in the oven for 15 mins.

Once cooked, I topped it with a balsamic reduction, red pepper flakes, and this KASS vegan grated parm (which is actually really good!):

Meal 6:
After being corrected by Coach last week (seriously… he busted me in the comments section), I did NOT skip meal 6. This is a new creation… one I’m still working on. As soon as it’s 100% I’ll share.
No coach, these aren’t protein macaroons.

Served with celery sticks and “honey” mustard. I say “honey” because it’s just Dijon with a drop of lemon Stevia.
I read this one someone’s blog but now I can’t remember where… please claim it if it’s your idea. Sorry!
Meal 7:
Dessert was this Blueberry Protein Microwave Cake I’ve had bookmarked from my friend Sarena @ The Non-Dairy Queen.

Just a couple of modifications: I left out the oats, reduced the egg whites to 1/4 C, and used just 1/8 tsp of baking soda. I added 1/2 tsp cinnamon, and used lemon stevia in the coconut “frosting.” Mine only needed 4 mins in the microwave.
It was friggin’ fantastic.

Peanut Butter & Jeggs
- 1/2 C egg whites
- 2 T peanut flour
- 2 T water
- 1/2 tsp cinnamon
- 5-6 drops liquid stevia
- 1/2 C berries
In a greased pan on med heat, scramble egg whites until 3/4 done (still a bit runny, ~2-3 mins).
Meanwhile, mix together peanut flour, water, cinnamon, and stevia to form your peanut butter (note: you could always use 2 T of your favorite nut butter here).
Add peanut butter and fruit to the eggs. Scramble together and allow egg whites to complete cooking (~1-2 mins).
Plate and enjoy!
Serves 1.

This day of eats was entirely vegetarian, and I managed 156g of protein. And it included 2 of the best meals ever. OMG.

I love reading your WIAWs: your meals are always so creative and proof that a high – protein diet can be achieved through real food as well as without relying on obscene amounts of animal protein! I’m all for the pb & j eggs combo…eggs are the “jam” (pun included) with almost anything!

I love your eats – they look tasty! I’m guessing your meals may change quite a bit when you officially start prep, though? I know part of the reason I eat the way I do (i.e. so boring!!) is because I basically just eat a modified competition diet all year round. In my mind, it’s easier to transition into a contest prep that way.

This is phase 1, and I’m not as restricted as most since I need to gain weight. I have to eat certain combos at certain times, portions are prescribed, and I can’t have much fat. Not to mention the protein I’m shoveling in.

I’ve never had cauliflower pizza, but I, too, am in a love relationship with anything pizza so I’m sure I’ll love it!
PB and Jeggs…I’m very afraid..But it’s time for bfast, need some protein before my barbell strength class, getting sick of eating hardboiled egg = I’m trying it right now! I don’t have fresh berries on hand, so I’m just going to have to substitute with dried cranberries. Will keep you posted

You know those crunchies you were scraping from the pan after your eggs were cooked? Yeah – ALWAYS do that. When I will little my Mom actually said “Meg, do you want the spinach” I loved spinach and we called those crunchy leftover pieces spinach. I always claimed them to be mine

Everything looks so amazing. I think your cauliflower crust is the best I have EVER seen, love. Everyone else’s just looks so messy! I will give yours a try FOR SURE. I love the addition/substitution of quinoa flakes. I will give that a go, too.

That is incredible and you are really working so hard at it! I’m incredibly proud of you. The funny thing about fitness and health is that I truly believe that it’s all a mental thing. If you believe in yourself and your goals, you will get there. I just tried cauliflower pizza this week for the first time. It was a bust but I am thinking it was the recipe I used. I am now going to have to try this version, because you say it is so good. You know I love me some pizza and you have never let me down!

I couldn’t quite figure out what jeggs were from the title. You’d think as the queen of combining words I’d get it, but I honestly thought it had something to do with jeans and your legs. Maybe skinny jeans so tight they look like your legs? I don’t know.
Anyways…I am with you on the fitmixer. I don’t know what I’m going to do when it runs out. I think I’m asking for some of that and Plant Fusion for my birthday. Is that weird?

I’ve seen cauliflower pizza all over Pinterest, but have yet to try it. It sounds so healthy though, and paired with the word ‘pizza’ makes me want to try it out. Your coffee-laced parfait looks so yummy! Be sure to tweet when you post that!

Very nice! It’s amazing how you can get through a day without any meat. That’s fantastic! The ‘crunchies’ on the pan are the BEST part of eggs, oats, etc. Can’t live without them

Fitmixer + ACV? I am trying that one as soon as my refill of awesomeness comes in. I agree, it really does give you a hue energy boost – perfect for pre-run and pre-gym IMO. And I want some of Meal 3 – that looks fabulous! You’re doing a great job keeping up the variety with all those meals!

Tofu, PB & J? Okay, I’m trying that. And you inspired me to order some stuff online–peanut flour and guar gum are headed my way! You’re also inspiring me to think a little seriously about competing, I’m just not sure Nashville has any good resources. I’d love to talk with you about what it takes to get started and commitment in terms of time/money/etc. No rush on getting back to me about that, but if you have a few free minutes this weekend to send a quick e-mail about the basics, that would be amazing!

love scraping crispy eggs off the pan
and PB jelly eggs actually sounds good, although I do not eat PB.
And I have yet to try cauliflower pizza, yours looks great!

I bet it would be good with tahini, too! Or even Sunbutter. I love any kind of runny nut/seed butter.

Okay…WOW on all the good food! And protein! So clean and amazing! Can’t wait to see the recipe tomorrow and love the links and ideas in this post. I love PB so I’d probably enjoy the PB + Jeggs – maybe I’ll give them a go tomorrow! Love it. No idea about meal 6 – I’m so not a good guesser.

I have never made a cauliflower pizza but yours is looking amazing! I definitely need to try it out. Love your variety with protein, definitely encouraging me to try and incorporate more as I’m focusing on more strength training than I used too.

Protein is key for lifting. I was a believer, but didn’t realize how much progress you can make by increased protein through out the day. It’s amazing!

You are such an inspiration. I wish I had a trainer to help push me and lead me in the right direction. I really love your eats and am so close to making a meal plan based off of what you are doing or at least similar. I just really appreciate having you as a positive role model for me.

You can do it on your own! I got a good base just working out alone. It helped me be able to make the gains I am now with the help of a trainer. Let me know if you have any questions.

DUDE!!!! Like seriously, we ARE foodie soul mates because I was THISCLOSE to making peanut butter “jeggs” yesterday morning!! You are really starting to freak me out! And omg, I LOVE the crispies leftover from egg scrambles…especially if there is some cheese involved!
