Raw Bulgur Breakfast Bowl + A Giveaway

Breakfast is my favorite meal of the day.

My breakfast is usually some sort of protein shake to follow a workout; however, I’ve been working out at night more and decided to shake up my breakfast routine.

Lat year I experimented with a raw bulgur – it’s not so different from overnight oats!  You simply soak the bulgur in water for 15-20 minutes and add whatever mix-ins you like.

When NuNaturals reached out to me to check out a few of their new orange and lemon liquid Stevia products I was particularly inspired by the orange-flavored liquid Stevia.  I could smell it before I even opened the bottle!  The best part was that is actually smelled like oranges (i.e. not like some your granny’s potpourri) – both of the new products use real lemon and orange.

I decided it would be perfect for breakfast in my raw bulgur bowl.  The bright orange sweetness went perfectly with cinnamon and a bit of cardamom.

Topped with fresh coconut, I felt like I was having breakfast on a tropical island rather than in the early morning dimness of my condo. Recipe at the end of this post.

NuNaturals would like YOU to try out their new products too – the lemon liquid Stevia (I used here in this vegan Alfredo sauce) and this orange liquid Stevia.

Let me start be saying I am NOT complaining but…

I finally got a referral to an orthopedic doc for my knee.  I took the first available appointment (May 22!).  THEN on my walk Saturday I realized I was feeling pretty good and decided to try running.  5.5 miles later, my knee was still fine!  Now, I didn’t run all of that 5.5.  I didn’t even try to run more than 1/2 a mile at a time, but all told I think I ran 2.5 miles… wayyyy more than I’ve been able to do since January.

Did simply making the doctor appointment cure me?!

Have you ever eaten bulgur (or other grain) raw/soaked?

Did you enjoy the sunshine this weekend?  Any races?

Vanilla is stil my fave, but will need to give orange a try, I love the smell of real orange, and I would love to add that taste to my muffins

  2. says

Looks like a great breakfast! It has been a while since I’ve had bulgur and I should remedy that!

I must admit that I’ve only ever tried the vanilla flavour… didn’t even know there was a whole line of flavours!

    • Laura says

I think these flavors are much more intense than the vanilla – which I like. I still have to add extract when I used the vanilla stevia.

  3. says

the orange and lemon stevias sound awesome! my favorite right now is the vanilla flavor. i have some ginger tea that is supposed to help with digestion, but it is VERY bitter and difficult to drink on it’s own so i always use the vanilla stevia to sweeten it up a bit! :)

    • Laura says

that’s a really good idea! i have some ginger tea that i don’t use for the same reason… i bet the lemon stevia would be great in it.

  4. says

I’ve only ever tried vanilla stevia, so so far that one’s my favorite, haha. I’ve never eaten a raw/soaked grain (other than overnight oats, but I’m not sure that one counts). I’m definitely trying soaked barley now, though!

  5. says

Our weekend was icy cold and snow is coming today… so not so much 😉
I’ve never had bulgur raw, just soaked in hot water, but that I love.

  6. says

Can not WAIT to make this! I love bulgur!!
I’ve never used NuNaturals brand stevia. I only had Sweet Leaf stevia- they have such an awesome selection of flavors. I’m kind of obsessed with the English Toffee.
The orange sounds interesting… I could see that being pretty good!

    • Laura says

I’ve never tried SweetLeaf, but I have been eyeing that toffee flavor in WF forever. They need an almond flavor!

    • Laura says

LOL! You know I would if I could! Did you know you can buy Stevia plants at Home Depot? You should grow some!

  7. says

Breakfast is definitely the best ingredient by far! I am loving your wonderful dish featuring it 😀
And although I am not entering since I have never even tried stevia this is an awesome giveaway and best of luck to all :)

I have never used stevia. I see it in the healthfodd store but I’m not much into sweets so never considered buying it. Your breakfast dish looks great, good to see bulgur wheat used other than in tabbouleh.

  9. says

I’ve just started going back to overnight oats for my breakfast — and bulgur is the next grain on my checklist to try, great timing!

But I have to be honest, I’ve never tried Stevia. I’m 110% artificial sweeteners but haven’t been able to bring myself to try it instead. But knowing you like, I could maybe be convinced to give it a try. I’d want to start safe and simple though — vanilla for me, please :)

    • Laura says

Never tried it?! You have to! It’s particularly good for sweetening non-baked foods like smoothies and oats. No after taste!

  10. says

i’ve only tried vanilla and regular… i REALLY love nunaturals vanilla!
i’d love to try the orange or lemon, so interesting! i’ve also been wanting to try the cocoa one.

  11. LauraT says

I would love to try the NuNaturals Orange Liquid Stevia especially so I could make a “copy cat” bowl of your yummy looking Bulgar Breakfast Bowl!
